Low Calorie Ice Cream Sandwich

This Low Calorie Ice Cream Sandwich recipe is a healthy dessert recipe that satisfies that sweet craving when you’re trying to diet!
I’m going on my third year of a low carb lifestyle. I love it but I’ve had my ups and downs. I mean, you can look at the blog and see how much I love my desserts! I’ve found some seriously good low carb dinner recipes like Chicken Cordon Bleu Casserole. so dinner isn’t really my problem. I can live without rice, pasta, and bread (ok sometimes I really miss bread), it’s dessert that gets me. It took some searching but I finally found the answer, Halo Top ice cream.
Halo Top ice cream comes in 17 flavors of low-calorie, high-protein, and low-sugar ice cream, and they use only the best, all-natural ingredients so it’s a healthy ice cream that actually tastes like ice cream. I especially love it because it’s low carb. My favorite flavor is Halo Top Birthday Cake ice cream (sounds good right?!) and it is only 5g net carbs per serving (1/2 cup)!! If you’re like my guy who just can’t give up carbs but does watch his calories you’re really going to love Halo Top. It’s low calorie ice cream, like so low that you can eat the whole pint without feeling guilty. His favorite flavor is Halo Top Chocolate ice cream and it’s only 280 calories for the whole pint. I can’t tell you what a happy guy he was when I came home and told him he could have a whole pint of ice cream ;).
On the Halo Top website they have recipes made with Halo Top ice cream and it inspired me to make one of my own. I eat my ice cream straight out of the container but I came up with a fun, low calorie ice cream sandwich for my guy. It’s pretty simple and I can make 6 at a time and keep them in the freezer so he can grab a snack any time he wants. I start by lining a pan with parchment paper and spreading the ice cream over the bottom of it. I like to use two different flavored pints so he has more options. I place the pan in the freezer and let the ice cream re-freeze for at least 2 hours. When it’s ready I lift the parchment paper out of the pan and slice the ice cream into squares that fit on half a graham cracker.
I sandwich the ice cream between two graham cracker halves and roll it in my healthy topping of choice. Almond slivers, peanuts, coconut flakes, or granola are my go-to toppings. Then it’s back in the freezer to re-freeze and they are ready to go when it’s time for dessert. I keep the extras in an airtight container and he can grab one whenever he likes. He loves these low calorie ice cream sandwiches and he swears they are better than the store bought sandwiches he used to buy. Totally satisfies that sweet craving without any guilt!

Low Calorie Ice Cream Sandwich
Ingredients
- 2 pint Halo Top ice cream, , softened
- 6 whole graham crackers
- Peanuts, coconut flakes, almond slivers, granola, , optional toppings
Instructions
- Line an 8x8 pan with parchment paper. Make sure it hangs over the sides for easy removal.
- Spread the ice cream evenly in pan. Place in freezer and freeze until hard, about 1-2 hours.
- Using the edges of the parchment paper, lift the ice cream on to a cutting board and cut into 6 squares.
- Split graham crack in half. Sandwich the ice in between graham cracker and roll the sides in your favorite topping.
- Refreeze for at least an hour and enjoy!
