Red, White, and Blue Fruit Pizza

This Red, White, and Blue Fruit Pizza is one of my favorite desserts to make for my 4th of July party, even when that party is just me and the kids hanging out in the backyard, playing with sparklers.

Summer is the time for all things berry and this sugar cookie fruit pizza recipe is packed with sweet, juicy, fresh strawberries, and plump blueberries, all arranged into a beautiful display on top of delicious cream cheese frosting and a soft sugar cookie crust.

How to Make the Sugar Cookie Crust:

  1. Preheat oven to 400 degrees F. 
  2. In the bowl of a mixer add the softened butter and the powdered sugar. Cream together until fully mixed. Note: I use salted butter for this recipe and therefore I don’t add any additional salt. If you use unsalted butter you’ll want to add ¼ teaspoon of salt.
  3. Add the egg and vanilla to the butter mixture and continue to mix until they are fully incorporated.
  4. In a large bowl combine the flour and baking powder and whisk together.
  5. A cup at a time add the flour mixture to the butter mixture, continue mixing until the dough begins to come together and pull away from the sides of the bowl.
  6. Remove the dough from the bowl and place on a floured surface. Roll into a large sheet ¼ inch thick.
  7. Using a 9 inch cake pan and a knife cut out a 9 inch circle. Do this by placing the cake pan on the dough (lightly don’t press down), and trace around the bottom with your knife..
  8. Gently lift the cut cookie dough and place it on a lined baking sheet. I use parchment paper, you can also use a silicone mat.
  9. Bake for 7-8 minutes, or until the edges begin to turn a light brown. Remove from the oven and let cool for 3-4 minutes then move to a baking rack to cool completely.

This recipe makes 2 9-inch fruit pizzas so you will repeat the process by pressing the leftover dough back together, rolling it out, cutting it, and baking. **You will still have some extra dough at the end. I just cut round cookies out of mine and let the kids eat them :). 

If you only want to make one 9-inch pizza you can freeze the extra dough. Wrap it in plastic wrap and place in a freezer bag before storing in the freezer for up to 3 months, or storing in the refrigerator for 1 week.

Can I Use Store Bought Sugar Cookie Dough?

Yes! I LOVE this sugar cookie recipe but if you want to save a little time you can use store bought sugar cookie dough. Just roll it out to about 1/4 inch thick, and bake according to the package instructions.

Store bought refrigerated sugar cookie dough does tend to spread a little more than my homemade recipe so be warned BUT a sugar cookie pizza crust is all about fun so it doesn’t need to be perfect 🙂

How to Make Fruit Pizza:

  1. In the bowl of a mixer combine softened cream cheese, powdered sugar and vanilla. Whisk together until fully mixed and the frosting is smooth and creamy.
  2. Spread cream cheese frosting over completely cooled sugar cookie crust. This doesn’t need to be super thick so you’ll need between 2 tablespoons and ¼ cup of frosting.
  3. Arrange your fruit on top of the frosting. To make my design I arrange my sliced strawberries in overlapping, concentric circles with the point of the slices facing out. Then I filled in the spaces with whole blueberries.
  4. Cut and serve.

Can I Make Red White and Blue Fruit Pizza Ahead of Time?

You can makes parts of this recipe ahead of time but I suggest waiting to assemble it until you are almost ready to serve. The reason for this is that once the fruit is laid on the sugary cream cheese frosting it will begin releasing juices that, over time,  could make the cookie soggy.

This doesn’t mean you can’t have everything ready ahead of time though.

  • Make your sugar cookie dough up to a month ahead of time.
  • Bake your cookies up to 3 days before and store in an airtight container.
  • Make your cream cheese frosting up to 3 days before and store in an airtight container in the refrigerator.
  • Slice your strawberries the night before.

When you’re ready to serve you can quickly put all of the parts together and you’ll have a beautiful, soft, sugar cookie fruit pizza  that everyone is going to love!
