Not that I have anything against a good sandwich, that’s great, but when you’re rushing off to work every day throwing the same thing into a lunch bag it can get a little boring. I love to experiment and I’ve shared a few of my favorites including these Cheesy Ham and Broccoli Rice Bowl and Chicken and Mushroom Wild Rice Bowl recipes, but my Sweet and Spicy Salmon Rice bowl recipe has been my go to lately. It was inspired by Chicken of the Sea Pink Salmon, Sweet and Spicy pounches. Chicken of the Sea Salmon pouches are single serving too, and just like the Minute Ready to Serve Rice it doesn’t need to be refrigerated. That makes it extra easy to take on the go! I whip up a quick chili lime sauce and chop up a few sweet peppers, pack them along with my Minute Ready to Serve Rice and Chicken of the Sea Pink Salmon, Sweet and Spicy packet, and when lunchtime rolls around I throw everything together for a quick, simple, delicious meal. I’ve been using Minute Ready to Serve Brown Rice for this but there are a variety to choose from including  Brown & Quinoa, Basmati Rice, Multi-Grain Medley, Jasmine Rice, and mixes like Black Beans and Rice, so get creative and give something different a try.

Sweet and Spicy Salmon Rice Bowl

This Sweet and Spicy Salmon Rice Bowl recipe is quick and easy toss the salmon and rice with sweet peppers and drizzle with a chili lime sauce.

Ingredients

  • 1 Minute Ready to Serve Rice Brown Rice, or any variety you want to try!
  • 1 pouch Chicken of the Sea Pink Salmon Sweet and Spicy
  • Sweet Peppers, diced

Chili Lime Sauce

  • 2 Tbsp Lime juice, freshly squeezed
  • 1 Tbsp Olive oil
  • 1/4 tsp Chilli flakes, red
  • 1/4 tsp Cumin
  • 1 tsp Honey
  • 1/4 tsp Garlic
  • Salt to taste

Instructions

  • Heat Minute Ready to Serve Rice Brown Rice in microwave according to package instructions.
  • Toss cooked rice with sweet peppers
  • Top with salmon, or toss with salmon if you prefer.
  • Drizzle with chili lime sauce.

Chili Lime Sauce

  • Combine ingredients in a small bowl and whisk with a fork to combine.
