- Stir together mashing avocado as you go until it is fully combined.
- Fold in eggs, red onions, celery, and bacon.
- Add salt to taste and a squeeze of lime juice to bring it all together.
- Refrigerate until you are ready to serve.

- ¼ cup Mayonnaise
- 3 Hard-boiled Eggs, chopped
- 5 strips Bacon, diced
- 1/4 cup Red Onion, finely diced
- 1/4 cup Celery, chopped
- 1 Lime, juiced
- Salt to taste

how long will this stay good in the fridge? will the avocado start to turn dark?
Hi Katie I store mine I press some plastic wrap down on to the top of the chicken salad so it seals the top layer and helps keep the avocado from turning brown (it is in a resealable container too). It should be ok for about 3 days.
