Who doesn’t love a good quesadilla? They are like the Tex-Mex version of a grilled cheese sandwich with gooey melted cheese and all sorts of awesome combinations of meats and veggies. Top it with some salsa fresca, sour cream, and guacamole and you have a perfect meal!

These pulled pork quesadillas are not only delicious but only take about 15 minutes to make!

Ingredients You’ll Need

Flour tortillas – You need to use flour over corn tortillas for quesadillas. They are softer and work much better with the recipe.

Butter – Skillet toasted tortillas are the only way to properly make quesadillas!

Pulled Pork – You can use store bought or make your own slow cooker pulled pork and have leftovers for dozens of other dishes!

Taco seasoning – You can use store bought or try making your own homemade taco seasoning.

Cheese – Cheddar or Mexican blend shredded cheese is best for this recipe, but feel free to use whatever kind of shredded cheese you prefer.

Onion – Red onion is best, but you can use yellow if needed.

Roasted corn – You can find this in cans or in the frozen section. If you use frozen corn, you will need to thaw it out first.

Red pepper – You can substitute this with a green, orange, or yellow bell peppers if you prefer.

You can add almost anything into your quesadilla. Try adding (either inside the quesadilla or as a topping) sliced avocado, cilantro, fresh jalapeños, or even quick pickled jalapeños!

How to make Pulled Pork Quesadillas

How to Make Pulled Pork Quesadillas

Step 1 – Heat pork. Preheat a skillet on medium heat. Add pulled pork, taco seasoning, and 2 tablespoons of water to the skillet. Heat meat, stirring to mix with the seasonings until the water has been absorbed. Set cooked pork aside.

Step 2 – Toast tortillas. Wipe out the skillet (make sure to get it clean) then place back on medium heat. Add butter to skillet and let it melt. Place one tortilla in the skillet.

Step 3 – Add ingredients. Sprinkle the cheese over one half of the tortilla followed by the seasoned pulled pork.

Step 4 – Let it cook, Cook until cheese begins to melt; about 2 minutes.

Step 5 – Flip. Using a spatula, fold the empty side of the quesadilla over the cheesy side and press down lightly on it. Continue to cook until the  cheese fully melts and the tortilla is lightly browned.

Step 6 – Serve. Flip the quesadilla onto your cutting board and let cool for 2 minutes before cutting and serving.

Make Your Own Pulled Pork

You can buy pulled pork at the store, but we started making pulled pork quesadillas as a way to use up our leftover pulled pork. You can use a Crock Pot to make slow cooker pulled pork, or pull out your Instant Pot pulled pork .

The great thing about making your own pulled pork is that you can flavor it however you like. In this recipe we’ve shown you how to take plain pulled pork and season it with taco seasoning similar to our pulled pork tacos, but we also love a good BBQ pulled pork or pork carnitas on a quesadilla!

What Type of Cheese is Used in Quesadillas?

We use cheddar cheese in our recipe, but you can change it up with any cheese you like or mix a few different types together.

Try a Mexican shredded cheese blend or use Oaxaca and/or Chihuahua cheese which melts nice and smooth inside of the tortilla. You can also add some pepper jack cheese if you want to add a little spice!

Can You Make Them Ahead of Time?

We don’t recommend making them ahead of time because they won’t be quite as crisp after a day or two, but you can save time by cooking your pulled pork ahead of time. Cooking the pork is the most time-consuming part but it freezes and reheats well.

Make a big batch of slow cooker pulled pork, or pork carnitas and let it cool completely. Place it in freezer bag and freeze for up to 3 months.

To reheat, remove it from the freezer and let thaw in the fridge overnight. Reheat the meat on the stove top over medium heat or in the microwave until warmed through.

How to Reheat Quesadillas

If you have leftover quesadillas, you can reheat them. I suggest heating a skillet over medium heat with a pat of butter. Place your quesadilla in it and let it slowly heat up, making sure not to let it burn, until the filling is warmed through.

You can also reheat in the oven by placing the quesadillas on a baking sheet and heating in a 325-degree F oven for 10-15 minutes.

Both methods will give you a nice crisp quesadilla.

Toppings for Quesadillas

Traditional toppings include salsa fresca, restaurant style salsa, guacamole, or sour cream. You may like to try some something different by using a fruit salsa like mango avocado salsa, or pineapple salsa.
