Chimichurri Steak

After we shared our easy chimichurri sauce recipe the other day I had to show you what we used it for. This delicious Chimichurri Steak is one of my favorite things to grill in the summer because it is quick and easy and packed with flavor from that chimichurri sauce.

A beautiful piece of flank steak or skirt steak (you can use them interchangeably for this recipe) is lightly coated in salt and black pepper and then placed on a hot grill for just a few minutes on each side. When it is cooked to a perfect medium rare it is thinly sliced into tender strips and topped with that amazing chimichurri sauce with it’s little bits of garlic, hot pepper, and parsley.

What is the Difference Between Flank Steak and Skirt Steak?

Flank steak is a lean cut of beef that comes from the abdominal area of the cow. It is can be a little tough so it is thicker and wider than a cut of skirt steak with a similar flavor.

Because it comes from the abdominal area of the cow which has a lot of hard-working muscles it can be a little tough. It is best to cook flank steak to quickly over high heat and cut into this pieces or marinate to help tenderize the meat.

Skirt steak is very similar to flank steak but it is a lean cut of beef that comes from diaphragm of the cow. It has a stronger beef flavor than flank steak and can be a little tougher. It should be cooked in the same way as flank steak and cut against the grain, into small pieces, to make it tender.

Temperature for Flank Steak:

Flank steak is a lean cut of meat so you don’t want it dry it out by overcooking it. It is best cooked to 125 F for rare steak or 135 F for medium rare. If you prefer a little less pink you can cook it to 145 F for medium but don’t go more well done than that or you’ll have  a very tough piece of steak.

How to Grill Flank Steak or Skirt Steak:

This flank steak recipe is really easy. Since flank steak (or skirt steak) is a thin cut of beef you want to cook it at a high temperature very quickly.

  1. Lightly salt and pepper your flank steak and let it sit out and come to room temperature (about 30 minutes).
  2. Heat your grill to 450 F.
  3. While the steak comes to room temperature and the grill heats up make your chimichurri sauce.
  4. When the grill is ready place the flank steak on the grill and cook for approximately 5 minutes on each side. This time is just a guide, the internal temperature of the steak of what determines if it is done. Remember you’ll want to cook your flank steak between 125F – 145F. I highly recommend and instant read thermometer to help you judge when it is done.
  5. When the steak is done bring it in and let it rest for 15 minutes. Then cut across the grain, slicing the beef into thin strips.
  6. Top with chimichurri sauce and enjoy!

The aromatic garlic flavors every bite and the fresh parsley, and oregano paired with the red wine vinegar give it this bright, fresh taste that brings the whole dish to life. Ingredients

  • 2 pound Flank Steak , can use skirt steak also
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • Chimichurri Sauce
