This delicious Cucumber Tomato Avocado Salad takes that Cucumber and Tomato Salad from last week and adds creamy avocado, red onion, and a lime dressing to kick it up a notch.

The combination of the crunch of the cucumbers and red onions, and the soft, creamy, avocado paired with ripe, red tomatoes makes a really amazing summer salad that is perfect for potlucks and BBQs.

What You’ll Need

Avocados – Avocados are one of the stars of this dish so you’ll want to make sure when you pick them that they are just ripened. Better to have one that is a little firm vs one that is too soft since you’ll be tossing them into them salad.

Tomatoes – This is an any time of year salad but I’m not gonna lie, it’s the best in the summer when you can get ripe, juicy, fresh summer tomatoes. Bonus points if they are straight from the garden!

Cucumbers – A  regular cucumber has a darker, thicker skin that often has a waxy coating on it. If you are using this type of cucumber you should peel it before adding it to the salad. Persian cucumbers, or English cucumbers are a great alternative because their skin is thinner and has a very mild flavor so you don’t even need to peel them. Just wash them thoroughly and cut them up and you’re ready to go.

Red Onion – I like to use red onions for this salad because they have a slightly sweet flavor, and they are milder than a white onion. If you don’t have one handy I suggest substituting with a yellow onion or, if you aren’t an onion fan you can skip it all together.

Homemade dressing – Red Wine Vinegar, lime juice, and olive oil are whisked together to create this bright lime vinaigrette that brings all of the flavors together. The lime also helps to keep the avocado from turning brown as quickly.

Salt & Black pepper – Everything in this salad needs a good helping of salt and pepper to really bring out the flavors!

How to Make It

Cut the Vegetables – Cut the vegetables into bite sized pieces that can easily be eaten with a fork.

Make the dressing – Whisk the olive oil, vinegar, lime juice, salt, and pepper together in a small bowl.

Toss – Toss the tomatoes and cucumbers together in a large bowl and then pour the dressing over them, tossing until everything is well coated. Add the avocado pieces and gently fold into the salad.

That’s it! Just three simple steps and you have an amazing summer tomato salad that is packed full of flavor.

How Do You Pick a Ripe Avocado?

For this dish you want an avocado that is slightly under ripe to perfectly ripe. This will give you an avocado that is delicious and creamy but has a slightly firm texture so you can fold it into the salad without mashing it.

To pick the right avocado you should go by feel. When you gently press on the avocado it will feel slightly soft but not mushy. As long as it has just a small amount of give but still feels firm you’ve got the perfect avocado. Make sure you use it within 1-2 days. Avocados are notorious for going over ripe in the blink of an eye!

Yes! Tomatoes and cucumbers are low in carbs and the addition of the healthy fats from the avocado and the olive oil make this a great keto side dish to bring to potlucks and summer parties.

How Long Does It Last in the Fridge?

This is a recipe that is really best served fresh. As all of us avocado lovers know once the avocado hits the air it starts to turn brown. It’s still completely edible and tastes just fine but it’s much less appealing to look at. If you’d like to make this salad ahead of time for a party I suggest putting everything together minus the avocado and then cutting the avocado and tossing it with everything else right before serving.

To store it tightly cover with plastic wrap or a well sealed lid. The avocado will begin to brown but it will still taste delicious for up to 2 days.
