Whew, we made it through the holidays. I don’t know about you but I’ve had enough cookies to last me until next December! I’m looking forward to getting back into a more normal schedule and our routine of family meals together. One of my resolutions for this year is to have a few go-to easy dinner recipes that only require a few simple ingredients and not a lot of time, so I can get dinner on the table with out a lot of fuss.

My first new recipe of the year uses Campbell’s® Classic Roasted Chicken Oven Sauce to make  a delicious roasted chicken meal. The prep only takes 5 minutes! All you need is 1 lb of chicken breasts, one bag of frozen pearl onions, and Campbell’s® Classic Roasted Chicken Oven Sauce. Combine them in a 9″ x 13″ casserole dish and by the time you have the oven pre-heated to 400°F  it is ready to bake.

Instead of cooking carrots in the sauce with the chicken and onions I made roasted balsamic baby carrots. I love them because they don’t require much work to make and roasting them caramelizes them slightly and adds a nice sweetness. You don’t even have to peel the baby carrots just wash them and toss them in olive oil and balsamic vinegar. Then lay them out on a piece of parchment paper on a baking sheet and sprinkle them with a little salt. Since they bake at the same temperature as the chicken I put them on the lower rack in the oven and cooked them at the same time as the chicken.

In about 45 minutes everything was ready. I served the chicken and onions over wild rice with the baby carrots on the side and a nice green salad. Everyone in my house loved it and I even got the kids to eat their carrots, lol.

Easy Dinner - Roasted Chicken and Vegetables

Roasted Chicken and Vegetable is an easy dinner recipe that is perfect for a busy weeknight.

Ingredients

  • 1 lb Chicken breasts, , boneless, skinless
  • 1 pouch Campbell’s® Classic Roasted Chicken Oven Sauce
  • 14 oz Frozen pearl onions
  • 1 lb Baby carrots
  • 2 tbsp Balsamic vinegar
  • 2 tbsp Olive oil
  • 1/8 tsp Salt

Instructions

  • Pre-heat oven to 400°F

Roasted Chicken

  • Place chicken breasts in 9" x 13" casserole dish.
  • Add pearl onions to casserole dish.
  • Pour Campbell’s® Classic Roasted Chicken Oven Sauce over chicken and onions.
  • Bake for 45 minutes.
  • Let stand for 5 minutes.
  • Serve chicken over rice .
  • Stir onions and sauce and serve over chicken.

Balsamic Roasted Baby Carrots

  • Wash baby carrots.
  • Place in large bowl and toss with balsamic vinegar and olive oil.
  • Place sheet of parchment paper on baking sheet.
  • Line baby carrots up on baking sheet and sprinkle with salt.
  • Bake in oven for 30 minutes.
