Ingredients You’ll Need

Here’s what you’ll need to make this frozen delight:

  • Watermelon – You will need to remove the rind and cut it into chunks.
  • Water – You do not need to use water if you don’t want to.
  • Prosecco – We use Prosecco, but you can use any sparkling white wine.
  • Mint – We use mint leaves as garnishment for the drink.

Instructions

Step 1 – Slice and freeze the watermelon. The first thing you need to do is to cut the watermelon into smaller chunks and remove the rind. Once it is ready, place the chunks in the freezer for 4 hours to freeze.

Step 2 – Blend the frozen watermelon. Take the frozen watermelon from the freezer and place in your blender and blend to puree it. If needed, you can add 2 to 3 tablespoons of water to help create a firm slush and to help the blender if needed.
Step 3 – Make the drinks. Carefully pour equal portions of the watermelon slush into four different glasses. You can use either stemmed champagne glasses or stemless ones. Once each glass is ready, pour in 3 ounces of Prosecco or other sparkling white wine over the slush in each glass and gently stir them. Finally, you can add a leaf or two or mint as a garnish. Serve fresh and enjoy!

Prosecco vs Sparkling White Wine

Prosecco is a sparkling  and slightly sweet wine from Italy. Despite its sweet notes, it is a dry, brut style wine.

We love the refreshing taste of Prosecco, but you could use just about any sparkling white wine if you prefer. When picking out a different wine, look for ones with “Brut” on the label. This indicates it was made in a similar way to Prosecco and will be a dry wine.

How to Make it Ahead of Time

You can’t make the drink ahead of time because it is frozen, but you can prepare the ingredients ahead of time.

Cut the watermelon into cubes and then store it in a freezer bag in the freezer. When you remove it, if it is too solid, you can let it thaw on the counter for a bit until it softens but is still frozen.

Make sure to prepare the cocktail right before you are ready to serve to ensure it remains frozen and the Prosecco doesn’t lose it’s delicious bubbles.
