Froot Loops Cupcakes

Froot Loops cereal has been a favorite of mine since I was a kid and we always have a box of it in our pantry. Everyone in the house enjoys a bowl of it for breakfast, but what if they could have it for dessert? Cupcakes for breakfast? Probably not. Cereal for dessert? Yes please!  These Froot Loop Cupcakes are a fun way to use Froot Loops for something other than breakfast. Froot Loops Cupcakes are packed with crunchy, fruity, cereal in fluffy, golden cupcakes, and they are topped with a homemade buttercream made with cereal milk. I even stuffed a little marshmallow cream in the middle for a sweet surprise ;).

I buy my Froot Loops at Sam’s Club so I get two bags of cereal in every box. That means we can all have our morning bowl of cereal and I can get creative with the second bag. These Froot Loops Cupcakes are super simple to make and they’ve become a family favorite!

What You’ll Need to Make Froot Loops Cupcakes:

  • Kellogg’s Froot Loops – Froot Loops are the star of this dessert. You’ll find them in the cupcake, the cereal milk used in the batter and the frosting, and sprinkled on top of the finished cupcake.
  • Boxed Cake Mix + ingredients on back of the box – You’ll want to use a yellow or white cake mix for these cupcakes and you’ll follow the instructions on the back of the box for the amount of eggs and oil required.
  • Cereal Milk – Drinking the cereal milk at the end of breakfast might be my favorite part. For these Froot Loops Cupcakes you’ll make your own cereal milk and then add it to both the cake mix (substituting it for the water listed in the ingredients on the back of the box), and in the buttercream frosting.
  • Butter – You can’t make buttercream frosting without butter. Make sure it is unsalted and room temperature before you start.
  • Powdered Sugar – Powdered sugar gives homemade frosting that sweet flavor, and smooth texture.
  • Marshmallow Cream – Who doesn’t love marshmallow cream? For this recipe we’ll stuff it in the middle of each cupcake as a sweet surprise.

How to Make Cereal Milk:

The key to getting that Froot Loops flavor into the cupcakes and frosting is cereal milk. We will be substituting the water called for the in the cake mix recipe (amount will vary by brand check the back of your cake mix box) with cereal milk, and we’ll be adding 4-6 tablespoons of it to the buttercream frosting.

  1. Fill a large bowl with Froot Loops and then pour the milk over it.
  2. Place the bowl in the refrigerator and let the cereal steep in the milk for about 30 minutes.
  3. Strain the milk into a separate bowl and discard cereal.

How to Make Froot Loops Cupcakes:

  1. Make cupcake batter according to the instructions on the back of the cake mix box. Substitute cereal milk for the water listed in the ingredients.
  2. Add 1 cup of crushed Froot Loops to the batter, folding in gently.
  3. Place cupcake batter into cupcake liners in a muffin pan, filling each one 1/2 full.
  4.  Bake according to cupcake instructions on the cake mix box.
  5. Make the marshmallow cream filling. Melt butter in the microwave and add it to the marshmallow cream, stirring until mixture is smooth.
  6. Let baked cupcakes cool completely. Once cooled cut a small core from the center of each cupcake.
  7. Fill each cupcake hole with marshmallow cream filling.
  8. In the bowl of your mixer add room temperature butter and powdered sugar. Using the whisk attachment mix the two together. Add cereal milk 1 tablespoon at a time until you reach a smooth consistency.
  9. Pipe the cereal milk buttercream frosting onto each cupcake and top with whole Froot Loops.

Ingredients

Cereal Milk:

  • 2 cups Kellogg's Froot Loops
  • 2 cups Milk

Froot Loops Cupcakes:

  • 1 box Cake Mix, yellow or white
  • Eggs and oil listed on back of cake mix box
  • Cereal Milk, this replaces the water in the ingredients on the cake mix box. Use the amount of water listed as your guide for how much cereal milk to add (do not use water)
  • 1 cup Kellogg's Froot Loops crushed, crushed
  • Whole Froot Loops for garnish

Marshmallow Cream Filling:

  • 6 tablespoons Butter, unsalted
  • 10 ounces Marshmallow cream

Cereal Milk Buttercream Frosting:

  • 2 sticks Butter, unsalted
  • 2 pounds Powdered sugar
  • 4-6 tablespoons Cereal milk

Instructions
