With school getting ready to start and fall sports just around the corner they only way I can keep up with the busy back-to-school season is to do a little meal planning. This Keto Taco Casserole always makes the list. Everyone in the house loves it and it’s keto so I don’t have to make a separate meal for myself.

What You’ll Need

  • O Organics Grass Fed Ground beef 85% lean 15% fat – Since this recipe is keto we use a higher fat ground beef.
  • Taco seasoning – This simple homemade taco seasoning is made with chili powder, cumin, garlic powder, and salt.
  • Jalapenos – To keep things simple I use diced, canned, jalapenos but if you prefer you can use fresh jalapenos.
  • Salsa – You can use any brand of salsa for this dish just make sure you read the label to ensure it is low carb.

  • O Organics Mexican style blend shredded cheese – Save a little time and use this shredded cheese.

Is Taco Seasoning Keto?

The taco seasoning packets you buy at the store can contain hidden ingredients such as cornstarch which aren’t keto. I highly recommend making our homemade taco seasoning. It is made with a blend of chili powder, cumin, onion powder, garlic powder, and salt. No hidden starches! It’s super simple to make. I keep a large jar of it in my pantry and use it for taco zucchini boats, my shredded chicken taco bowl, and of course keto taco casserole!

How to Make It

Brown the ground beef. Heat a large skillet over medium high heat. Once hot add ground beef and cook for 7-10 minutes until it is browned. Once the beef if browned remove the skillet from the heat and pour it into a strainer to remove the excess grease. 

Add the seasoning. Add the ground beef back to the pan and sprinkle with the taco seasoning. Add 1/2 cup of water  and heat over medium high heat, stirring to coat the beef with the seasoning. Cook until the liquid has been absorbed then remove from the heat.

Put it all together. Add the jalapenos, salsa, and 8 ounces of cheese to the ground beef and stir together. Spoon the mixture into a greased 11×7 inch casserole dish. In a small bowl whisk together the eggs. Pour the eggs over the ground beef mixture and use a spoon or fork to gently move the ground beef around making sure that the eggs mixture is evenly dispersed. Sprinkle the remaining 4 ounces of cheese over the top of the casserole.

Bake. Place it in the oven to bake for 45 minutes.

Can I Make It Ahead of Time?

Yes! This recipe can be refrigerated for a 3-4 days or frozen for up to a month. It’s a great dish to make ahead of time and then serve for a quick and easy dinner later in the week. It also makes the perfect lunch. Just a few minutes in the microwave and you have a hot meal that will keep you full and happy until dinner!

How to Store It

Refrigerator – You can make this ahead of time and store it in the refrigerator. You can leave it whole or you can cut it into individual servings that are stored separately so you can warm them up for quick lunches and dinners. You can reheat the casserole in the oven at 350 degrees F for 20 minutes or until it is warmed through.

Freezer – This casserole can be stored in the freezer for up to 2 months. To freeze this dish I suggest cutting it into individual servings and storing separately. This will make it easier to warm it up later. To reheat you can microwave for 3-5 minutes or you can heat in the oven at 350 degrees F for 10-15 minutes.

Ingredients

  • 2 pounds O Organics® Grass Fed Ground beef 85% lean 15% fat
  • 3 tablespoons Taco seasoning
  • ½ cup Water
  • 5 ounces Jalapenos, canned
  • ¼ cup Salsa
  • 12 ounces O Organics Mexican style blend shredded cheese, divided
  • 6 O Organics Large brown eggs

Instructions

  • Preheat oven to 350 degrees F.
  • Heat a large skillet over medium high heat. Once hot add ground beef and cook for 7-10 minutes until it is browned.

  • Remove from the oven and let cool for 10 minutes before serving with your keto toppings of choice.
