Low Carb Strawberry Almond Popsicles

Sometimes I need a guilt-free dessert and these Low Carb Strawberry Almond popsicles are the answer!
Kat and I have mentioned before that we try to eat low carb most of the time. My husband is the one who got us started on our low carb journey. Shortly after I had my second child he started eliminating carbs from his diet and after seeing what a difference it was making for him I jumped on board (Kat was soon to follow). Reducing the amount of carbs in our diet has been a huge change, not just in how we eat but how we feel. Even after almost 2 years I’m still amazed at how much better and more energetic I feel when I’m keep my carbs under control.
Now, that doesn’t mean we don’t still crave for dessert sometimes. Kat and I have gotten pretty good at figuring out ways to fill that sweet tooth without overloading on carbs. I like it all on its own as a way to manage hunger and increase my energy but I have been making a lot of different popsicles for the kids this summer and I wanted a frozen treat that I could eat without feeling guilty.
I mixed the strawberry EAS AdvantEdge Carb Control with crushed almonds, poured the mixture into popsicle molds, and put them in the freezer for 4-5 hours.
Once the popsicles where ready I had a low carb treat that was a great source of protein. It may not seem like much but these little pops have been the perfect answer to my sweet cravings and I love the crunchy almond pieces.
