It sure doesn’t take long for that vacation feeling to wear off, does it? If you follow us on Instagram you might have seen some of the yummy pictures I was taking while on vacation in Maine. It was the first time I had been there and it was absolutely beautiful.

This was my view for the week. Pretty nice, right? Our vacations are usually jam packed with things to do, people to see, places to go. This one was all about relaxing. I was able to turn my brain off for a whole week and just sit outside enjoying the cool air and the sounds of the lake. It was awesome.

We also ate, a lot. Maine has some amazing food. We ate lobster at almost every meal and had pie for dessert. Did you know Maine’s state dessert is pie?! It is and OMG if you are ever there you have to try a piece…any flavor, they were all good!

Of course it was over way too quickly and now I’m back to reality. I did realize something while I was up there: I’ve got to get better at making time for myself. I’m not great at that. Life is busy and I like getting things done. I always have something planned or some place to be. It was so nice to decompress while I was away though; it really made me see how important it is to carve out just a little time for me. So, once a week, instead of stopping at the grocery store, or running errands on my way home from work I am taking that golden hour in between getting home and needing to start making dinner and making it all about me. No computer, no phone calls, just me, a simple snack and a good book.

My little bit of me time includes a snack because that’s how I roll. Indulging myself means getting to have something a little extra. However, as wonderful as Maine was for my soul it wasn’t so good to my waistline. I wouldn’t change a thing. I loved everything we ate in Maine, but I do need to get myself back on track. For the most part that means cutting out desserts completely, but on that one day a week that I give myself just a little time to relax I let myself indulge, and right now my go to treat is a Fiber One ® soft baked cookie or bar.

This week it was a Fiber One ® Strawberry Streusel bar. I love me some strawberry so this bar is just the pick me up I need halfway through a week of counting calories and avoiding dessert. Even when I don’t manage to get any time to myself these bars are great because they come individually wrapped so I can toss one in my purse and have one when I need a break on a busy workday.

You know me. I can never leave well enough alone. So when I want to make my Fiber One ® bar even more decadent, without the guilt, I whip up a small batch of Peanut Butter Whip. It is homemade whipped cream sweetened with artificial sweetener and whipped with a small amount of natural peanut butter. It is low carb and sugar free it makes a great topping for all of the Fiber One ® bars I’ve tried so far.  It doesn’t take much, a little dab will do ya, and I love it with my strawberry streusel — it makes it taste like a PB&J dessert!

Peanut Butter Whip

Ingredients

  • 1/4 c heavy whipping cream
  • 1 Tbsp natural peanut butter, no sugar added
  • 4 drops liquid artificial sweetener, or powdered sweetener to taste.

Instructions

  • Use a mixer on high to whip cream into stiff peaks.
  • Add peanut butter and continue mixing.
  • Add sweetener and mix thoroughly.
  • Serve.
