I don’t know about you but when I’m eating keto the thing I miss the most is pizza! I’m always looking for low carb pizza alternatives like my Low Carb Pizza Casserole. These easy keto stuffed peppers are my new favorite. They are filled with everything you need for a meat lovers’ pizza. Italian sausage and pepperoni are packed into a bell pepper along with low carb tomato sauce and mozzarella cheese.

When they come out of the oven you’ve got yourself a meat lovers’ pizza without all of the carbs. Every bite has a little cheese, sauce, and a lot of meat. You won’t even miss the crust!

The best part is you can make these pizza stuffed peppers with any of your favorite keto pizza toppings. You can even stuff each individual pepper with different toppings so everyone in the family can enjoy their own personal pizza stuffed pepper.

How To Make Them:

  1. Preheat the oven to 400 degrees F.
  2. Cut each pepper in half and remove the seeds and the ribs (the white ridges inside the pepper). Place cut peppers in a baking dish.
  3. Place one tablespoon of sauce in the bottom of each pepper.
  4. Top with 1 ounce of Italian sausage, and pepperoni pieces. 
  5.  Add a small amount of mozzarella cheese, packing it into the pepper, so it fills up the space. 
  6. Place a second tablespoon of sauce on top of the mozzarella, followed by a little more pepperoni, and enough mozzarella to finish filling the pepper.
  7. Place the baking dish in the oven and bake the peppers for 40 minutes. You will know they are done when the pepper begins to wrinkle around the edges, and the cheese is fully melted.

Pizza Stuffed Peppers Variations

When it comes to these stuffed peppers, keep in mind that all the toppings are approximate. There are no wrong answers, and you can add more or less of any of the ingredients that you want. Here are a few other ideas that you can add into your peppers to make them even more special:

  • Black Olives – Adding some olives is so good and give you copper, vitamin E, iron, and calcium. 
  • Ground Beef – Hamburger is one of the most popular pizza toppings. Sprinkle in a little bit of cooked ground beef to make it even meatier! 
  • Ham – Chop up some ham and place it in the peppers. It’s a lovely flavor and adds a great texture too. 
  • Mushrooms – It’s almost impossible to have pizza without some mushrooms, right? Yum!
  • Bacon – When you add bacon, it gives a fantastic salty flavor that goes well with the other meats. 
  • Onions – Any variety of onions would be perfect. Green, red, or even sweet white onions are fantastic in these pizza stuffed peppers. 
  • Cheddar Cheese – Either completely swap out the mozzarella for cheddar or add some cheddar to the mozzarella. Either way, it’s going to be super cheesy and low carb. 
  • Tomatoes – Garden fresh tomatoes are my favorite to add to these stuffed peppers, but sun-dried tomatoes would be a terrific idea as well. 

These are just a few options, but you can add any of your favorite low carb pizza toppings to the stuffed peppers. Just make sure that you cook any meat prior to stuffing it in the peppers.

Can I Add Rice To These Stuffed Peppers?

Traditional stuffed peppers recipes almost always have some rice in them. If you are eating low carb, then rice isn’t going to be a good option. It’s loaded with carbs and will not fit in a keto diet. 

A great alternative to regular rice would be cauliflower rice. It cooks perfectly in the peppers and goes well with the pizza-flavored ingredients. The great thing about cauliflower rice is that it tends to take on the flavors of the other foods. It has a mild flavor, but it is so nutritious for you. It has protein, fiber, and is a terrific option to add antioxidants to your diet. 

Our recipe for pizza stuffed peppers doesn’t require any rice, but don’t feel like you can’t add some if you want. If you decide to put some cauliflower rice in your peppers, just add a tablespoon or two to each pepper. Use as much as you like and dig in!

Can You Make Keto Stuffed Peppers Ahead Of Time?

Yes, they are ideal for meal planning and making ahead of time. Make a batch or two of the stuffed peppers, then let them cool all the way down. It’s important to let the peppers cool all the way, so you don’t end up with a bunch of condensation in the container. 

After they have cooled, then you can either wrap each one individually with plastic wrap or place them all into an airtight container. Make sure that the lid fits tightly, and you keep the peppers in the coolest part of the fridge and away from other strong-smelling foods. 

Stuffed peppers will last in the fridge for up to 4 days. You can easily reheat them in the microwave or warm them in the oven. Warming the peppers in the oven takes a little bit longer, but it’s a great method. Just heat the oven to 350 degrees and warm them for 10-12 minutes or until they are hot. 

In addition to refrigerating the peppers, you can also freeze them. It’s best to do a flash freeze method, so they don’t’ stick to each other. Place the peppers on a baking sheet, so they aren’t touching and put them in the freezer for two hours. Then take each pepper and place them in a freezer bag or container. Thaw in the fridge then reheat as needed.

What Do You Serve With Stuffed Peppers?

Honestly, these meat-stuffed peppers are so good; you don’t even need to serve them with anything else. They have veggies, meat, and cheese! But if you prefer to serve them with something, your options are unlimited. 

Serve the pizza stuffed peppers with a nice garden salad, low-carb breadsticks, roasted vegetables, or really anything else you like. They really go with all sorts of foods, so you can make pretty much anything you want.
