One of the things I love most about being a blogger is that I get to celebrate the holidays a little longer than everyone else. When the air gets crisp and cool and the kids go back to school most people go pumpkin crazy, but I take it one step further and start thinking about Halloween. I have so many fun things planned for our big Halloween party this year, but one of my favorites (so far) has to be these adorable Mini Witch Cheesecakes. You read that right, witch cheesecakes! I’ve stepped up my game with delicious, creamy, miniature cheesecakes topped with edible witch hats! This simple Halloween recipe is going to be the talk of the Halloween party this year!

I’ll warn you, the hardest part about making these witch’s hats is keeping the kids from eating all of the Welch’s Fruit Rolls before you’re finished. I swear, everyone could be downstairs playing and I open a box of Welch’s Fruit Rolls and suddenly they are all in the kitchen wanting to know if they can have one. Welch’s Fruit Rolls make an appearance in the kids’ school lunches all the time. The kids think it is so fun to unroll the fruit rolls.  Fruit is the first ingredient and they contain 100% of the daily value of Vitamin C and 25% daily value of Vitamins A & E, so they make a great snack.

Turns out Welch’s Fruit Rolls also make a great Halloween treat! I was trying to think of a unique way to make edible witch hats for my cheesecakes when it dawned on me that rolled up Welch’s Fruit Rolls might just do the trick. I experimented a bit and finally ended up laying three strips of Welch’s Fruit Rolls side-by-side slightly overlapping and cut them to a length of about 5 inches. Then, I rolled them up into a cone shape. I placed another small strip around the base and placed a star sprinkle on it. Then I put the fruit roll on top of a chocolate striped cookie and ta-da! I had an adorable witch’s hat and two excited kids who were begging to start eating them :).

You could stop there and you’d have an awesome Halloween recipe for your Halloween party, but I wanted to take it one step further. It’s Halloween after all, so we need witches too! I made a simple cheesecake batter and added purple food coloring to it. In my mini cheesecake pan, I added a layer of chocolate cookie crust and then poured the purple batter on top. The mini cheesecakes baked for about 15 minutes then I let them cool completely before adding candy eyes and a chocolate smile to each little witch. Everything is cuter with eyes, don’t you think?! I topped them with my witch hats and I’ve got to say, they are pretty much the cutest Halloween dessert I’ve ever made.

My kids were so relieved when I finally gave in and let them each have one. If their reviews are any indication these Mini Witch Cheesecakes are going to be a HUGE hit at this year’s Halloween party!

Mini Witch Cheesecakes

Ingredients

Cheesecake Filling

  • 16 oz. Cream cheese, ,softened
  • 1 c Sugar
  • 3 Eggs
  • 2 Tbsp Flour
  • tsp Vanilla
  • 16 drops Purple food coloring

Crust

  • 2 c Chocolate sandwich cookies, ,crushed
  • 2 Tbsp Butter, , melted

Decorations

  • 1 box Welch's Fruit Rolls, Berry
  • 16 Chocolate striped cookies
  • 16 Star sprinkles
  • 32 Edible Eyes
  • 1/2 c Chocolate, , melted

Instructions

  • Preheat oven to 350°F
  • Melt butter and add crushed cookies
  • Form the cookie mixture into 1 inch balls and place them in your mini cheesecake pan.
  • Use tamper to firmly press the ball in to the bottom of the pan.
  • In bowl beat cream cheese, sugar, eggs, and vanilla until thoroughly mixed.
  • Add flour slowly, mixing it in completely.
  • Add food coloring until you reach desired color. 
  • Pour cheesecake mixture over crusts, filling each tin almost to the top.
  • Bake for 15 minutes.
  • Let cool completely.

Decorations

  • To create the witch's hat unroll a Welch's Fruit roll and cut 3 4-6 inch strips. 
  • Lay the fruit rolls side-by-side slightly overlapping.
  • Roll the fruit rolls up into a cone shape.
  • Use a small strip of fruit roll to place around the bottom of the hat like a hat band and add a star or any other sprinkle decoration you'd like. 
  • Place Welch's Fruit Roll cone on top of cookie 
  • Place cookie hats on top of mini cheesecakes.
  • Add eyes to cheesecakes and use melted chocolate to draw a smile on.
