If I had my way every dinner would end with either creme brulee or bread pudding…or maybe both if I was really lucky ;). Since my waistline might not be as happy about decadent desserts year round I save my favorites for the holidays when I can share them with friends and family.

This year I’m trying out something new, Muffin Tin Bread Pudding. They are perfect for holiday parties because they come out in individual servings and, since each one is cooked in it’s own little compartment you can make multiple flavors so everyone gets something they like!

My flavors for Christmas were inspired by International Delight® Seasonal Creamer flavors. I saw them when I was picking up groceries at Walmart last week and grabbed a couple to try with my coffee. As soon as I opened up the International Delight® Sugar Cookie Coffee Creamer I was in love. It smells amazing and it tastes even better. Seriously guys, it’s like adding a little bit of holiday cheer to your coffee! As soon as I took that first whiff I knew I had to try it in my bread pudding. What better way to celebrate Christmas with family than Sugar Cookie Bread Pudding. Am I right? I didn’t want to leave out all of my chocolate loving family members and that’s when it dawned on me. If I could make individual bread puddings I could have something to everyone. Now, I know I could have gone out and bought enough ramekins to make individual bread puddings that way but I have a pretty big family and I didn’t really want to have to go buy new bakeware. Enter the muffin tin. The individual compartments are just the right size and I used a 12 cup muffin tin so I could make 6 using the Sugar Cookie creamer, and for my chocolate lovers, 6 using International Delight® Salted Caramel Mocha Coffee Creamer.

It’s actually really easy to do you soak the bread cubes in a mixture of eggs, International Delight coffee creamer, heavy cream, sugar, and vanilla extract. I made two different mixtures to soak my bread in and for the Salted Caramel Mocha bread pudding I added chocolate chips to the mixture to give it a super chocolate-y flavor. Once the bread is nice and wet you spoon the bread mixture into the well-greased muffin tin and pour any extra liquid evenly over the bread puddings. Then pop it in the oven and bake for 30-40 minutes.

While the muffin tin bread puddings are cooking you have time to make a quick glaze for the Sugar Cookie Bread Pudding. Just whisk together some powdered sugar and heavy cream, or milk, and add a splash of vanilla extract. For the Salted Caramel Mocha Bread Pudding I saved some time and used store bought caramel syrup. Once the muffin tin bread pudding is out of the oven, let it cool for a few minutes, drizzle it with the glaze or caramel, and then use a knife to gently pull them out of the muffin tin. And there you have it, perfectly delicious, individual bread puddings that are super easy to make!

I love my bread pudding at room temperature so I may or may not have eaten a Salted Caramel Mocha bread pudding the next morning along with my coffee and Salted Caramel Mocha Coffee Creamer. It was heaven!

Ingredients

Sugar Cookie Bread Pudding

  • 3 tablespoons Butter
  • 3/4 cup International Delight® Sugar Cookie Coffee Creamer
  • 3/4 cup Heavy cream
  • 1/2 cup Sugar
  • 1 teaspoon Vanilla extract
  • 2 Large eggs + 1 Large egg yolk
  • 4 cups Bread, cubed

Glaze

  • 1/2 cup Powdered Sugar
  • 2-3 tablespoons Heavy Cream or Milk
  • 1/2 teaspoon Vanilla Extract

Salted Caramel Mocha Bread Pudding

  • 3 tablespoons Butter
  • 3/4 cup International Delight® Salted Caramel Mocha Coffee Creamer
  • 3/4 cup Heavy cream
  • 1/2 cup Sugar
  • 1/2 cup Chocolate Chips
  • 1 teaspoon Vanilla extract
  • 2 Large eggs + 1 Large egg yolk
  • 4 cups Bread, cubed
  • 1/2 cup Caramel Syrup

Instructions

  • Preheat the oven to 325, and grease 6 cups of a muffin pan with oil or cooking spray.
  • Make the sugar cookie bread pudding by combining the butter, heavy cream, International Delight Sugar Cookie Coffee Creamer, sugar, vanilla extract,and eggs in a bowl and whisking until thoroughly combined.
  • Add 4 cups of bread cubes to the sugar cookie cream mixture tossing gently until it is well coated and then letting the bread sit for 5 minutes.
  • In a separate bowl make the Salted Caramel bread pudding by combining the butter, heavy cream, International Delight Salted Caramel Mocha Coffee Creamer, sugar, chocolate chips, vanilla extract,and eggs in a bowl and whisking until thoroughly combined.
  • Add 4 cups of bread cubes to the salted caramel mocha cream mixture tossing gently until it is well coated and then letting the bread sit for 5 minutes.
  • Spoon the sugar cookie bread cubes into 6 muffin tin cups distributing any excess liquid evenly between the 6 cups.
  • Spoon the salted caramel mocha bread cubes into 6 muffin tin cups distributing any excess liquid evenly between the 6 cups.
  • Place the muffin tin on a baking sheet (to catch any spills) and put it in the oven to bake for 35 - 40 minutes.
  • While the bread pudding bakes make the glaze by whisking together the milk or heavy cream with the powdered sugar and vanilla extract.
  • Remove the bread puddings from the oven and let cool in the pan for 10 minutes before using a knife to loosen and remove them from the muffin pan.
  • Drizzle the glaze over the sugar cookie bread pudding and drizzle the caramel syrup over the salted caramel mocha bread pudding.
  • Enjoy!
