Making fun and delicious Halloween treats doesn’t have to be hard. These easy No Bake Monster Cookies are made using our Haystack Cookies recipe and the simple addition of edible eyes.

The kids went nuts over them and I didn’t even have to turn on the oven, just a few simple ingredients stirred together in a bowl and a little wait time while they set and BOOM! Halloween dessert is served.

What You’ll Need to Make No Bake Monster Cookies:

  • Peanut Butter
  • Butterscotch chips
  • Cocktail Peanuts
  • Chow Mein Noodles – these are the crunchy chow mein noodles most often made by La Choy. You can usually find them in the international section of the grocery store near the Asian sauces.
  • Edible eyes

That’s it! 5 simple ingredients for delicious Halloween no bake cookies. If you want to give them a different look you can substitute chocolate chips for butterscotch chips.

A lot of recipes also add marshmallows, or substitute marshmallows for peanuts.

How to Make No Bake Monster Cookies:

  1. In a small microwave-safe bowl combine butterscotch chips and peanut butter. Microwave the mixture for 30 seconds at a time, stirring in between each, until it is smooth.
  2. In a large bowl combine peanuts and chow mein noodles. Pour the melted butterscotch mixture over them, gently stirring until everything is well coated.
  3. Drop the mixture onto parchment paper to form 2-2.5 inch piles.
  4. Add the edible eyes.
  5. Let them cool until the butterscotch is fully hardened.
  6. Serve or store in an airtight container for up to 1 week.
