One Pot Low Carb Sausage and Riced Veggies

One Pot Low Carb Sausage and Riced Veggies
I’m going to be honest guys, the holidays are not kind to my waistline, LOL. I get so busy trying to get everything done, and there are so many cookies to bake and parties to attend…there are just temptations everywhere! I’m not going to sit here and talk about how I avoid them. I LOVE the holidays and all of the amazing food that goes along with it! During the week though, I do my best to have some better-for-me options that are quick and easy to make so at least I’m only indulging on the weekends. This One Pot Sausage and Riced Veggies dinner is a low carb recipe that can be made in less than 30 minutes and is so good I’ve already had it twice this week.
You only need a few ingredients to make this low carb one pot meal, Italian sausage, onion, kale, goat cheese, and Green Giant Riced Veggies. I discovered the riced veggies in the freezer section of my grocery store and I’m kind of in love. Green Giant Riced Veggies are 100% vegetables so they are a great low carb, gluten-free alternative to rice, pasta, and potatoes, and a great way to get an extra serving of vegetables in each day. I’ve riced vegetables before but it’s kind of time consuming so I’m totally digging that I can just buy them ready to go! No prep work or clean-up. Green Giant Riced Veggies come in several varieties including Riced Veggies Cauliflower Medley, Riced Veggies Cauliflower & Sweet Potato, Riced Veggies Cauliflower, and Riced Veggies Cauliflower & Broccoli. All of them are great in a recipe or as a side dish. I chose the Green Giant Riced Cauliflower & Sweet Potato for my one pot meal and it went great with the Italian sausage and kale.
For this low carb dinner start by cooking your Italian sausage in a skillet. The thinner you slice the Italian sausage the faster it will cook. I cut mine into 1/2 inch slices so it took about 10 minutes to get them fully cooked through. 5 minutes into your cooking add the diced onions and saute them with the sausage. Once your sausage is cooked through add the riced cauliflower and sweet potatoes along with the kale and cook for 5 minutes more. The kale will be tender and the Green Giant Riced Cauliflower & Sweet Potatoes will be warmed through. Sprinkle with a little goat cheese on top and your low carb dinner is served!

One Pot Low Carb Sausage and Riced Veggies
Ingredients
- 2 tbsp Olive oil
- 1 lb Italian sausage, , sliced
- 4 oz Onion, , diced
- 1 bag Green Giant Riced Cauliflower & Sweet Potato
- 1.5 c Kale, , thinly sliced
- 1/4 c Goat cheese, , crumbled
- Salt and Pepper to taste
Instructions
- In a skillet over medium high heat add the olive oil and Italian sausage. Cook for 5 minutes.
- Add the diced onions the the pan sauteing them with the Italian sausage for another 5 minutes or until the sausage is cooked through.
- Add the riced veggies and kale cooking for another 5 minutes or until the kale is tender and the riced veggies and warmed through.
- Add salt and pepper to taste.
- Serve and sprinkle with crumbled goat cheese.
