Alright guys, are you ready for this? I’m giving Melinda all of the credit for these amazing Pina Colada Cake Bites. We had just finished making our Sour Cream Pound Cake and Melinda had the brilliant idea of using some of the cake to make a bite size dessert. These perfectly sweet, coconut-y, Pina Colada Cake Bites were the result and OMG, you have got to try them!

Pina Colada Cake Bites are super easy to make. You start with pound cake. You can make your own using our Sour Cream Pound Cake recipe OR if you don’t feel like baking you can buy one at the grocery store. You’ll also need Cream of Coconut, powdered sugar, dried coconut, fresh pineapple, and maraschino cherries. The Cream of Coconut and powdered sugar make a delicious icing and the fresh pineapple brightens everything up. It’s all the flavors of a pina colada in one (ok maybe two) delicious bite!
How to Make Pina Colada Cake Bites:
- Cut your pineapple into cubes and cut your pound cake into cubes that are about the same size.
- Mix the Cream of Coconut with the powdered sugar to make a thick icing.
- Dip each pound cake piece into the icing and then dip it into the toasted coconut pieces.
- Place a pineapple cube on top of the pound cake cube, top with a cherry and put a skewer through all three.
Can I Make Pina Colada Cake Bites Ahead of Time?
This is one recipe I wouldn’t make ahead of time. The juice from the pineapple would make the pound cake get soggy if it sat overnight. You can however cut your pound cake up and dip it in the icing and coconut. Store these in an airtight container overnight. You can also cut your pineapple up and store it overnight. That way on the day of the party all you have to do is assemble everything and you’re ready to go!

Pina Colada Cake Bites
Ingredients
- 1 Sour Cream Pound Cake, you can purchase a premade pound cake to save time
- 1 Fresh Pineapple
- 3 cups Powdered Sugar
- ¼ cup Cream of Coconut
- 2 cups Toasted Shredded Coconut
- 20 Maraschino Cherries
Instructions
- Slice the pineapple and cut into cubes that are approximately 1 inch.
- Slice the pound cake into cubes that are about the same size as the pineapple cubes.
- In a bowl combine the powdered sugar and Cream of Coconut. Add the Cream of Coconut 1 tablespoon at a time mixing thoroughly in between each one until you have a thick icing (this may not take all of the Cream of Coconut).
- Dip the bottom half of each pound cake cube into the icing and then into the toasted shredded coconut.
- Place a pineapple cube on top of each and then a cherry. Push the skewer through all three.
- Enjoy!
I never heard about Pina Colada. But these bites are looking delicious. I will try this cake at home.
