Quick and Easy Antipasto Skewers

These Quick and Easy Antipasto Skewers are not only a super delicious appetizer for parties, they are also low carb, keto, and gluten-free! That means they are the perfect addition to holiday parties.

Once the holiday party season is over we’ll head right into New Year’s resolutions and for me, it will be back to strict keto. These Antipasto Skewers shift from party food to a quick and easy lunch/snack when I’m eating low carb.

Antipasto Skewers is a low carb party appetizer

They are prosciutto, fresh mozzarella, sun dried tomatoes, and a fresh leaf of basil skewered on a toothpick. Pretty darn easy and totally delicious. I think the sun dried tomato is what makes the whole thing. It has so much flavor and when you combine it with the mozzarella, prosciutto and fresh basil it is a perfect bite.

Antipasto Skewers are easy holiday make ahead appetizers

The best part is they are completely customizable so if you don’t like prosciutto switch it our for Genoa salami, if you want to skip the sun dried tomato try an artichoke instead. The possibilities are endless so you never get tired of eating them!

Ingredients

  • 8 Prosciutto, , slices
  • 16 Ciliegine, (1 inch) mozzarella balls
  • 16 Sun dried tomatoes in oil
  • 16 Basil leaves

Instructions

  • Cut prosciutto slices in half.
  • Fold up prosciutto and place one sun dried tomato, one basil leaf, and one mozzarella ball on top of it.
  • Skewer with a toothpick.
