The kids were off for a week for Spring Break and that means I’ve spent the last week keeping the kids entertained. We had a great time. A few movies, a few days at the park playing in the sunshine and a couple of afternoons spent baking up treats together in the kitchen. My kids love ice cream so at the beginning of their spring vacation we went to the grocery store and they got to pick out a special treat. While we were there I also grabbed everything we needed to make this super decadent Salted Caramel Chocolate Skillet Cookie.

Some days are crazier than others when both kids are home from school but I have to say I’m so grateful that I’m able to be a stay at home mom and enjoy this time with my kids. My daughter has decided she wants to be a food blogger like mommy and she is always asking to help me in the kitchen. She even walks around the house with her toy camera taking pictures of the food she makes and doing food videos. I love my little mini me! 🙂 Over spring break we made several things in the kitchen together and my son was our official taste-tester. I got my flavor inspiration from the pint of Häagen-Dazs TRIO Salted Caramel Chocolate ice cream that I picked out to be my little reward for making it through spring break! Häagen-Dazs TRIO Salted Caramel Chocolate ice cream is layers of lightly salted caramel ice cream and irresistible chocolate ice cream stacked between crisp Belgian chocolate. You can see why it’s one of my favorite flavors right?

One afternoon my daughter and I spent the day in the kitchen doing what I love, creating new and fun recipes for the blog and I have to say I’m pretty impressed with what we ended up with. Our Salted Caramel Chocolate Skillet Cookie was made with chocolate chip cookie dough that she helped me mold into a 6-inch cast iron skillet. Then we filled it with all sort of goodies, pretzels, caramel, and white chocolate chips. Then we added more cookie dough over the top and put it in the oven to bake. She was right there with me snapping photos along the way and both she and my son came running when the cookie came out of the oven and it was time for taste testing!

We topped that warm cookie with two scoops of Häagen-Dazs Salted Caramel Chocolate ice cream and dug in! It was pretty darn amazing. The salty, crunch of the pretzels with the sweet chocolate and creamy caramel made the center of that gooey skillet cookie totally irresistible. The two scoops of Häagen-Dazs on top, melted slightly as they sat on that warm cookie and turned it into an extraordinary dessert. It was a perfect ending to a wonderful day with my kiddos. I got to share something that I’m passionate about with them and watch them enjoy it right along with me. It was pretty special to me and something I hope they remember for a long time to come.

Ingredients

  • 30 oz tube Chocolate chip cookie dough
  • 1 . c Crushed pretzels
  • ¼ c Caramel, , melted
  • ¼ c White chocolate chips
  • 1 c Häagen-Dazs TRIO Salted Caramel Chocolate

Instructions

  • Preheat oven to 350°F.
  • Divide cookie dough in half and press one half of dough into the bottom of the skillet and up the sides.
  • Fill center with crushed pretzels, white chocolate chips and melted caramel.
  • Place the rest of the dough on top.
  • Bake for 20-25 minutes or until edges are brown.
  • Serve with Häagen-Dazs ice cream!
