Sausage Egg and Cheese Breakfast Tots
You guys know by now how much I LOVE tater tots and these delicious Sausage Egg and Cheese Breakfast Tots are a bite-sized brunch recipe that combines breakfast favorite like eggs, sausage, and potatoes, into one amazing bite. They make the perfect addition to Mother’s Day brunch, Father’s Day breakfast in bed, or just a weekend family breakfast.

Sausage Egg and Cheese Breakfast Tots are easy to make all you need are tater tots, ground sausage, cream cheese, eggs, and cheddar cheese.
How to Make Sausage Egg and Cheese Breakfast Tots:
- Brown sausage in a skillet over medium high heat. Once meat has browned drain the grease then add sausage and cream cheese back to the skillet and cook until fully combined. Set aside.
- In a skillet scramble the eggs and set aside.
- Grease a mini muffin pan and place three tater tots in each cup. Bake for 10 minutes.
- After 10 minutes remove the muffin pan from the oven and use a tamper to press the tater tots down into each cup. This will create a tater tot cup.
- Fill the tater tots with a small spoonful of eggs (about 1 teaspoon) and then place 1 teaspoon of sausage on top of the eggs.
- Place the tater tots back in the oven and cook for another 15 minutes.
- Remove the breakfast tots from the oven and sprinkle with a little cheddar cheese then return to the oven for another 2-3 minutes or until cheese has melted.
- Remove breakfast tots from the oven and let cool for 5 minutes before removing them from the muffin pan.

- Mini Muffin Tin – You read that right, it’s a mini muffin tin not a full-size muffin tin. You’ll have to trust me on this one!

- 48 Tater Tots, , frozen
- 6 Eggs, , large
- 8 oz Ground sausage
- 4 oz Cream cheese
- 4 oz Cheddar cheese, , shredded

I just finished making your cheeseburger tots and the sausage egg and cheese tots, they are fantastic! I did make the cheeseburger tots a little thin I think, they are hard to keep together. I have one quick question though, can I freeze these and reheat them at a later date?
Hi Eryn, I’m so excited that you liked them! I haven’t tried freezing them and I’m honestly not sure if it will work. My only concern would be that the tots would overcook when you hear them back up. But I think it could possibly work. If you try it out let us know.
What is a tamper?
Hi Dianne, a tamper is just a small wooden peice with a flat bottom that is usually used to make mini tarts. We found it was perfect for this recipe. You could also use the bottom of a small shot glass or anything else that will fit inside the mini muffin tin.
Kat, my 12-year old daughter are about to make these for a brunch at church tomorrow. Can we make the tater cups along with the sausage and eggs (separately) the night before and warm up and assemble and bake the next morning?
I haven’t tried it but I do think it would work. I would just make sure the tater tots cups are baked one more time on their own to warm and crisp them a little before stuffing them with the warmed up sausage and eggs. You might consider just scrambling the eggs really quick in the morning while the tots warm up instead of reheating them. Up to you.

I was wondering if you could make these without pre cooking the eggs. Since it each cup takes so little egg it would probably cook fairly quick? Has anyone tried it that way?
I think that would work but I haven’t tried it myself. If you give it a try let me know how it turns out!

I looooove recipes that use tots. These are so darn cute! I think I could eat like 20.
Delicious! However for only 16 tot cups, you can get by with half as much sausage and cream cheese as called for, and 1/4 as much egg!
