I think tomatoes are my favorite vegetable….or is it a fruit? I can never keep that one straight. Either way tomatoes are delicious. I grew up in the south where slices of fresh tomatoes straight from my grandma’s garden were on the table at every meal. One of my childhood friends still credits summers spent at Grandma’s house for her love of tomato sandwiches. A fresh tomato, a little bit of mayo and a dash of salt on white bread. Yum! Now I’m hungry. These days I don’t eat many sandwiches. I try to stay low carb most of the time, but that doesn’t mean I can’t still enjoy a good tomato. Especially in the summer when I can pick them up at the farmer’s market on the weekends and have awesome lunches for work all week!

Now instead of eating a slice of tomato between two pieces of bread I serve tuna on, or in, my tomatoes. Bumble Bee® tuna is one of my work-week staples. It’s so easy to take with me and it makes a quick meal for those days I’m stuck at my desk all day. I can eat tuna right out of the can, but that gets pretty old when you eat it for lunch a couple of times a week, so I like to experiment with different recipes. You might remember our Avocado Tuna Salad. That is still one of my favorites but lately I’ve been loving these Stuffed Tomato Tuna Melts.  They are low carb, gluten-free, and pretty freaking delicious!

I’ve been using Bumble Bee®Prime Fillet® Gourmet Flavors Albacore Tuna they combine the highest quality albacore tuna with restaurant-inspired ingredients. I’m currently hooked on the Jalapeños & Olive Oil and Chipotle & Olive Oil varieties. I love how much flavor they have, and they are packed in olive oil so I don’t even need to add mayonnaise. You can use any Bumble Bee Sensations® Seasoned Tuna or Bumble Bee®Prime Fillet® Gourmet Flavors Albacore Tuna flavors your heart desires, so go with what you like best. The tuna melts are simple to make. Just take a medium tomato and cut off the top. Then run a knife around the inside, making sure not to cut through the bottom, and use a spoon to scoop out the center. Sprinkle a little salt inside the tomatoes and fill them with your tuna. The Bumble Bee® Prime Fillet® Gourmet Flavors Albacore Tuna come in 2.5 oz. pouches or 5 oz. cans and the Bumble Bee Sensations® lightly marinated premium tuna is available in 3.6 oz. kits or 4 oz. cans. I use about 2.5 oz. of tuna per medium-sized tomato. Squeeze a little lime juice (you can use lemon juice if you are using a different flavor) over the tuna and then place the tomatoes in a casserole dish with a slice of cheese on top of each. Bake at 400F until the cheese is melted and bubbly and serve!

I usually make mine on a Sunday afternoon, eat one (or two) and then store the rest in the refrigerator for lunch at work or a quick dinner on a busy weeknight. Sure you could just eat your tuna right out of a pouch but this is a great way to change things up. Besides you don’t want to miss out on those summer tomatoes!

Ingredients

  • 4 medium Tomatoes
  • 2 5 oz. cans Bumble Bee® Prime Fillet® Gourmet Flavors Albacore Tuna, I used the Jalapeños & Olive Oil and Chipotle & Olive Oil varieties
  • 4 slices Cheddar Cheese
  • 1/2 Lime
  • Salt

Instructions

  • Preheat oven to 400°F.
  • Hollow out tomatoes. Cut off the tops, then run a knife around the inside, making sure not to cut through the bottom. Then use a spoon to scoop out the insides.
  • Sprinkle a little salt inside each tomato.
  • Add half a can of tuna to each tomato.
  • Place tomatoes in a casserole dish and top each one with a slice of cheese.
  • Bake for 5-7 minutes, or until cheese is melted and bubbly.
  • Serve.
