Just a few more weeks until school starts. This year the kids aren’t going back until after Labor Day but the school supply list is out and we’ve already started our back-to-school shopping. I seem to be more excited about it than the kids :). Along with all of the back-to-school staples like juice boxes and peanut butter and jelly I also let the kids pick out all of the mix-ins for a big batch of Trail Mix Cookies. We ended up with Harris Teeter semi sweet chocolate morsels and Harris Teeter mini marshmallows to go along with the Harris Teeter trail mix and oatmeal. These Trail Mix cookies are so easy to make and if you put them in an airtight container they last for days. They make the perfect lunch box dessert or after school snack!

M&M trail mix cookies

My daughter had so much fun helping me make them. The recipe is simple you cream the shortening, butter, sugar, peanut butter, and eggs together and then add the dry ingredients flour, oats, baking soda and baking powder mixing until everything is combined. Then come the mix-ins. You start with trail mix and oatmeal and then you can add anything else you like, dried fruit, candy, whatever you and your kids like. Mine chose chocolate chips and marshmallows because well, let’s just say they are their mother’s children :).

Peanut butter trail mix cookies with M&Ms

The cookie dough gets dropped onto a baking sheet and then into the oven they go baking at 375 degrees F for about 10 minutes or until they are light brown. Once they are out of the oven let them cool for a few minutes and then put them in an airtight container, or call the kids and sit down for cookies and milk like we did!

Ingredients

  • 2 c All-purpose flour
  • 1 c Sugar, , granulated
  • 1 c Brown sugar, , packed
  • 1 c Butter, , softened
  • ½ c Vegetable shortening
  • 1 c Peanut butter
  • 2 Eggs
  • 2 tsp Vanilla extract
  • 1 ½ c Old-fashioned oats
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 2 c Trail Mix
  • 1 c Semi sweet choc chips
  • 1 c Mini marshmallows

Instructions

  • Preheat oven to 375°F.
  • In electric mixer, beat butter, shortening, sugars, peanut butter, vanilla and eggs on medium speed until creamy.
  • Stir in flour, oats, baking soda and baking powder thoroughly.
  • Stir in trail mix, chocolate chips
  • Stir in marshmallows last.
  • Drop dough by rounded tablespoonfuls, 2 inches apart onto ungreased cookie sheet.
  • Bake for 9 to 10 minutes or until light brown.
  • Let cool for 3 minutes
  • Then remove from cookie sheet and place on wire rack until completed cooled.
  • Place in airtight container
