8 Flour Tortillas (8-inch) 1 pound Ground Beef ½ cup Onion, diced 3 tablespoons Taco seasoning, divided ½ cup Water 16 ounces Refried beans 1 cup Enchilada Sauce 2 cups Cheddar cheese, shredded Your favorite toppings: fresh tomatoes, black olives, green onion, sour cream, etc.

Toast tortillas. In a large skillet over medium-high heat, spray the skillet with cooking spray and cook each tortilla until they begin to crisp slightly, approximately 1 minute per side. Set aside.

Second layer. Place a second tortilla on top of each and spread the enchilada sauce over the top. Sprinkle with shredded cheddar cheese.
