Add flour. Sift flour, baking soda, and salt together and then add to the mixture ½ a cup at a time, mixing on low until the dough is formed. Let the dough stand for about 30 mins.
Roll dough into balls. Roll a teaspoon of dough into a ball and then roll in cinnamon sugar. Place balls of cookie dough 2 inches apart on a parchment paper lined cookie sheet
Bake. Bake for 8-10 minutes or until lightly browned around edges. Remove from oven and let the cookie cool on the baking sheet for about 5 minutes before transferring to a cooling rack.
