I know I keep saying it but I’m so excited for Thanksgiving! The menu is set and my guy and I will get up early Thanksgiving morning to drive out to my parents’ house where my mom and I will spend the day cooking, baking, and of course eating :). It’s a long day and at the end of it I’m usually exhausted but Friday is another early morning, not because of Black Friday shopping, but because Melinda and I get together to start our holiday baking!

Holiday baking is a messy business but somebody has to do it. We clear our day, stock up on everything we need for the day, and I show up bright and early with my apron, rolling pin, and a bottle of Gallo Family Vineyards Moscato. Mmm,  I love their Moscato, it’s sweet and fruity tasting, perfect for making Moscato mimosas before we get down to the business of baking. Once the aprons go on we’re talking cookies, candies, fudge, brownies, you name it we’re making it. To say the kitchen gets a little chaotic is an understatement especially when people start coming in and out of the kitchen for a little taste-testing. All of that chasing people out of the kitchen has led to more than a few baking fails. My favorite was when I only added 1/2 a cup of flour to my chocolate chip cookies instead of 1 1/2 cups. I was so confused when my cookies flattened out into crisp, thin chocolate chip cookies. I couldn’t figure out what I had done wrong! My guy said he loved them but I still haven’t lived that one down. Melinda has become an advocate for making sure your baking powder is not expired. She made 2 batches of something that just fell flat, literally, until we realized that the baking powder was really, really old. Ah well, live and learn :).

At the end of a very long day we have boxes and boxes of homemade goodies packed up and ready to be sent off to work, school, and kept in the freezer at the house for those last minute drop in guests that we all have during the holidays. It isn’t easy but it’s totally worth it and honestly a day of baking with your best friend is pretty darn fun! At the end of the day we pour ourselves a glass of Gallo Family Vineyards Moscato and order something for dinner because there’s no way we’re cooking one more thing! 😉

White Chocolate Macadamia Crunch

White chocolate, peanut butter, macadamia nuts, and rice krispies come together to make an easy dessert recipe

Ingredients

  • 2 cups Crispy Rice cereal
  • 1 cup Mini marshmallows
  • ½ cup Creamy peanut butter
  • 1 pound White chocolate
  • 1 cup Macadamia nuts

Instructions

  • In a large bowl mix the cereal, mini marshmallows, and macadamia nuts together.
  • Pour the white chocolate chips into a separate microwave safe bowl and melt it by cooking it on high 30 seconds at a time, stirring in between until it is smooth. Once the white chocolate is melted add the peanut butter and stir it in, microwaving a little more if needed.
  • Pour the melted white chocolate peanut butter mixture over the cereal mixture and gently stir it together until it is completely coated.
  • Drop the mixture onto a pan using a tablespoon.
  • Place in refrigerators until the mixture is set.
