Granola Fruit Tart

Granola Fruit Tarts are a delicious breakfast or brunch recipe made with a baked granola crust and a vanilla yogurt filling topped with your favorite fresh fruit.

Ingredients

Crust

  • 4 cups Granola
  • ½ cup Butter softened
  • 4 tablespoons Honey

Filling

  • 2 cups Vanilla Greek yogurt
  • 8 ounces Cream cheese softened
  • 1/2 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 envelope Gelatin
  • Fruit of your choice

Instructions

  • Preheat oven to 350 degrees F.
  • Combine granola, softened butter, and honey in a bowl. Mix well.
  • Prepare your tart pan(s) by greasing them with non-stick spray or melted butter and lining the removable bottom with parchment paper.
  • Press mixture into six 4-inch tart pans or one 11- inch tart pan.
  • Place the tart pan(s) on a baking sheet and bake for 10 minutes.
  • Remove from the oven and let cool completely.
  • Mix yogurt, softened cream cheese, sugar, vanilla extract and gelatin in a mixer until whipped completely.
  • Immediately pour filling into cooled tart crust. If using 4-inch tart pans it is approximately ¼ cup of filling per tart.
  • Place tart(s) in refrigerator for least an hour before serving.
  • Top with desired fruit and serve.
