Whipped Ricotta and Tomato Dip
This Whipped Ricotta and Tomato Dip blends ricotta and goat cheese with fresh summer tomatoes for a light appetizer recipe that everyone will enjoy.
- 16 oz Ricotta Cheese
- 8 oz Goat cheese , softened
- 2 tsp Rosemary , finely chopped
- ¼ tsp Salt
- ⅛ tsp Pepper
- 1 Tbsp Olive Oil
- 2 c Cherry Tomatoes , cut into quarters
- 5 Basil leaves , thinly sliced
In a food processor combine ricotta cheese, goat cheese, rosemary, salt and pepper.
Blend until fully combined and smooth.
Scoop cheese mixture into a serving bowl and top with chopped tomatoes, basil, and a drizzle of olive oil.
