Mini Witch Cheesecakes
These adorable Mini Witch Cheesecakes is a fun Halloween recipe that is going to make your next Halloween party so much fun!

Cheesecake Filling
- 16 oz. Cream cheese ,softened
- 1 c Sugar
- 3 Eggs
- 2 Tbsp Flour
- 1½ tsp Vanilla
- 16 drops Purple food coloring
Crust
- 2 c Chocolate sandwich cookies ,crushed
- 2 Tbsp Butter , melted
Decorations
- 1 box Welch's Fruit Rolls, Berry
- 16 Chocolate striped cookies
- 16 Star sprinkles
- 32 Edible Eyes
- 1/2 c Chocolate , melted
Preheat oven to 350°F
Melt butter and add crushed cookies
Form the cookie mixture into 1 inch balls and place them in your mini cheesecake pan.
Use tamper to firmly press the ball in to the bottom of the pan.
In bowl beat cream cheese, sugar, eggs, and vanilla until thoroughly mixed.
Add flour slowly, mixing it in completely.
Add food coloring until you reach desired color.
Pour cheesecake mixture over crusts, filling each tin almost to the top.
Bake for 15 minutes.
Let cool completely.
Decorations
To create the witch's hat unroll a Welch's Fruit roll and cut 3 4-6 inch strips.
Lay the fruit rolls side-by-side slightly overlapping.
Roll the fruit rolls up into a cone shape.
Use a small strip of fruit roll to place around the bottom of the hat like a hat band and add a star or any other sprinkle decoration you'd like.
Place Welch's Fruit Roll cone on top of cookie
Place cookie hats on top of mini cheesecakes.
Add eyes to cheesecakes and use melted chocolate to draw a smile on.
