Mini Witch Cheesecakes

These adorable Mini Witch Cheesecakes is a fun Halloween recipe that is going to make your next Halloween party so much fun!

Ingredients

Cheesecake Filling

  • 16 oz. Cream cheese ,softened
  • 1 c Sugar
  • 3 Eggs
  • 2 Tbsp Flour
  • tsp Vanilla
  • 16 drops Purple food coloring

Crust

  • 2 c Chocolate sandwich cookies ,crushed
  • 2 Tbsp Butter , melted

Decorations

  • 1 box Welch's Fruit Rolls, Berry
  • 16 Chocolate striped cookies
  • 16 Star sprinkles
  • 32 Edible Eyes
  • 1/2 c Chocolate , melted

Instructions

  • Preheat oven to 350°F
  • Melt butter and add crushed cookies
  • Form the cookie mixture into 1 inch balls and place them in your mini cheesecake pan.
  • Use tamper to firmly press the ball in to the bottom of the pan.
  • In bowl beat cream cheese, sugar, eggs, and vanilla until thoroughly mixed.
  • Add flour slowly, mixing it in completely.
  • Add food coloring until you reach desired color. 
  • Pour cheesecake mixture over crusts, filling each tin almost to the top.
  • Bake for 15 minutes.
  • Let cool completely.

Decorations

  • To create the witch's hat unroll a Welch's Fruit roll and cut 3 4-6 inch strips. 
  • Lay the fruit rolls side-by-side slightly overlapping.
  • Roll the fruit rolls up into a cone shape.
  • Use a small strip of fruit roll to place around the bottom of the hat like a hat band and add a star or any other sprinkle decoration you'd like. 
  • Place Welch's Fruit Roll cone on top of cookie 
  • Place cookie hats on top of mini cheesecakes.
  • Add eyes to cheesecakes and use melted chocolate to draw a smile on.
