In a skillet over medium high heat add the olive oil and Italian sausage. Cook for 5 minutes.
Add the diced onions the the pan sauteing them with the Italian sausage for another 5 minutes or until the sausage is cooked through.
Add the riced veggies and kale cooking for another 5 minutes or until the kale is tender and the riced veggies and warmed through.
Add salt and pepper to taste.
Serve and sprinkle with crumbled goat cheese.
