Foil Packet Red, White, and Blue Potatoes

These grilled potatoes are made easy by cooking them in a foil packet with a mix of herbs and butter.

Ingredients

  • 4 lbs Red white, and purple potatoes
  • 1 Tbsp Rosemary minced
  • 1 Tbsp Thyme minced
  • 4 Tbsp Butter
  • 1 tsp Salt

Instructions

  • Par boil potatoes until just soft enough to stick a fork into. You can do this up to a day ahead of time.
  • Cut potatoes into small pieces.
  • Toss with herbs and salt.
  • Place pats of butter on top of potatoes.
  • Wrap in foil and place on the grill for 20 minutes.
  • Serve with sour cream, cheese, and bacon.
