Stuffed Tomato Tuna Melt

Stuffed Tomato Tuna Melts with fresh tomatoes and cheddar cheese. They make a great low calorie lunch recipe.

  • 4 medium Tomatoes
  • 2 5 oz. cans Bumble Bee® Prime Fillet® Gourmet Flavors Albacore Tuna I used the Jalapeños & Olive Oil and Chipotle & Olive Oil varieties
  • 4 slices Cheddar Cheese
  • 1/2 Lime
  • Salt


  • Preheat oven to 400°F.
  • Hollow out tomatoes. Cut off the tops, then run a knife around the inside, making sure not to cut through the bottom. Then use a spoon to scoop out the insides.
  • Sprinkle a little salt inside each tomato.
  • Add half a can of tuna to each tomato.
  • Place tomatoes in a casserole dish and top each one with a slice of cheese.
  • Bake for 5-7 minutes, or until cheese is melted and bubbly.
  • Serve.
