Cucumber and Tomato Pasta Salad

Fresh tomatoes and cucumbers are the key to this delicious pasta salad.

  • 1 box Barilla® Box Penne
  • 1-2 c Grape tomatoes sliced
  • 1 Cucumber diced
  • 1/2 Red Onion diced
  • 8 oz. container Perlini Mozzarella small pearl-sized mozzarella. If you can't find it just dice up fresh mozzarella
  • 1 c Red wine vinegar
  • 1 c Olive Oil
  • Salt to taste


  • Boil water and put your noodles in to cook.
  • Once pasta has cooked add your tomatoes, cucumbers, and red onion.
  • Pour in olive oil and red wine vinegar.
  • Add the fresh mozzarella.
  • Add salt to taste.
  • Cover it up, put it in the fridge until ready to serve.
