This cheesy Artichoke Chicken Bake is an easy chicken bake recipe made with layers of chicken breast stuffed with cheese, bacon, and artichoke hearts, baked to perfection in the oven!
Place a chicken breast on a cutting board and press your hand on it holding it firmly in place. Use a sharp knife parallel to the cutting board to cut through the chicken horizontally creating two thin slices. Repeat this step for each of the chicken breasts.
Combine all of the ingredients except the chicken in a bowl and stir together.
Place 4 thin chicken breast halves in a greased baking dish. Sprinkle with 1/2 teaspoon of salt.
Spread half of the cheese mixture over the chicken.
Place the remaining 4 chicken breast halves on top of the cheese mixture.
Top with the remaining cheese mixture.
Cover the dish with foil and bake at 400 degrees F for 30 minutes.
Remove the foil and continue to bake for 10 minutes or until chicken is cooked to an internal temperature of 165 degrees F.
