Place the bacon slices and brown sugar in a bowl and toss together until the bacon is well coated.
Lay the bacon strips side-by-side on the prepared baking sheet.
Place in the oven and bake for 15-20 minutes turning the bacon halfway through. Start keeping a close eye on it around 13 minutes to ensure it doesn’t burn.
Remove the cooked bacon from the oven and use tongs to carefully move the pieces to a flat surface lined with parchment paper or a clean baking sheet lined with foil. Lay it side-by-side to cool.
Once cooled chop it into bite-sized pieces.
