Low Calorie Ice Cream Sandwich

Low calorie ice cream sandwiched between two graham crackers and rolled in healthy toppings.

Ingredients

  • 2 pint Halo Top ice cream , softened
  • 6 whole graham crackers
  • Peanuts, coconut flakes, almond slivers, granola , optional toppings

Instructions

  • Line an 8x8 pan with parchment paper. Make sure it hangs over the sides for easy removal.
  • Spread the ice cream evenly in pan. Place in freezer and freeze until hard, about 1-2 hours.
  • Using the edges of the parchment paper, lift the ice cream on to a cutting board and cut into 6 squares.
  • Split graham crack in half. Sandwich the ice in between graham cracker and roll the sides in your favorite topping.
  • Refreeze for at least an hour and enjoy!
