- 16 ounces Whole milk ricotta cheese
- 8 ounces Goat cheese softened
- 2 teaspoons Finely minced rosemary
- 1/2 teaspoon Salt divided
- 1/4 teaspoon Pepper divided
- 1 tablespoon Olive oil
- 8 ounces Cherry tomatoes cut into quarters
- 5 Thinly sliced basil leaves
In a food processor combine ricotta cheese, goat cheese, rosemary, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper.
Blend until fully combined and smooth.
In a small bowl add chopped tomatoes, basil, remaining salt and pepper, and olive oil. Toss until everything is well mixed.
Scoop cheese mixture into a serving bowl and top with the seasoned tomatoes.
Serve with bread, chips, crackers, and/or veggies.
