Caramel Apple Bread

Caramel apple bread is the fall version of banana bread. This sweet quick bread features all the flavors of apple pie with a delicious caramel icing on top.

Ingredients

Bread:

  • 1 cup Brown sugar
  • 2/3 cup Vegetable oil See note #1
  • 3 large Eggs
  • 2 cups All purpose flour
  • 3 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Kosher salt
  • 2 teaspoons Apple Pie Spice
  • 1 large Granny Smith apple peeled and cored apple cut in 1/2-inch chunks
  • 1 cup Chopped pecans

Glaze:

  • 4 tablespoons Butter
  • ½ cup Packed brown sugar
  • 2 tablespoons Heavy cream
  • ½ cup Powdered sugar sifted

Instructions

  • Preheat the oven to 350°F.
  • Grease a 9 x 5 -inch loaf pan and line the bottom with a piece of parchment paper.
  • In the bowl of your stand mixer add brown sugar, vegetable oil, and eggs.Mix with paddle attachment until smooth.
  • In a separate large bowl combine the flour, baking powder, baking soda, salt, and apple pie spice. Stir together until well mixed.
  • Add the dry ingredients to the wet ingredients mixing gently until they are fully combined.
  • Fold in the chopped apple and pecans.
  • Pour the batter into the pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  • When done baking remove from the oven and let cool in the pan for 30 minutes. Then remove from the pan and cool on a wire rack.
  • Once the apple bread is cool make the frosting by adding the butter and packed brown sugar to a sauce pan and heating over medium heat. When it begins to bubble let cook for 2 minutes, stirring vigorously.
  • Add the heavy cream and continue to stir cooking for 30 seconds more.
  • Remove the pot from the heat and add the powdered sugar, stirring everything together until it forms a thick frosting.
  • Pour over the top of the apple bread and use a knife to spread it evenly. It cools quickly so be fast!

Notes

  1. You can substitute up to ⅓ cup of applesauce for ⅓ cup of vegetable oil.
