Grilled Summer Salad
Fresh summer vegetables including sweet corn and tomatoes grilled in a foil packet and tossed in a lime vinaigrette. .

Summer Salad
- 2 ears Sweet Corn
- 2 c Cherry tomatoes halved
- 1 Orange bell pepper diced
- 1 Jalapeño diced
- 1 15 oz. can Black Beans
- 1 Tbsp cilantro minced
- Salt
Summer Salad
Remove black beans from the can and pour into a strainer then wash with water to clean the beans.
Mix vegetables and beans together and add salt to taste (about 1/4 tsp).
Pour mixture onto foil and wrap up in a tight packet.
Place packet on the grill over indirect heat and cook for 20-30 minutes.
Remove from the grill, toss with lime vinaigrette, and garnish with cilantro before serving.
