Spicy Chicken Pasta
Spicy chicken pasta made with jalapenos, fresh oregano, and a sprinkling of Cojita cheese to finish it.
- 1 box Barilla® Spaghetti
- 4 tablespoons Extra Virgin Olive Oil
- 1 Tablespoon Fresh Oregano leaves only
- 1 Jalapeno Pepper or to taste
- 1/2 c White Wine dry
- 2 lbs Plum Tomatoes crushed
- Salt to Taste
- 1/2 c Cojita Cheese
Place a pot of water to boil.
In a skillet brown the chicken thighs with 1/2 the olive oil and add the jalapenos and oregano.
After 1 minute add white wine and reduce by half.
Add the crushed tomatoes and one cup of water and season with salt, and bring to a boil.
Meanwhile cook the pasta according to directions and toss with sauce.
Stir in remaining olive oil and Cojita cheese before serving.
Garnish with oregano.
