Spicy Chicken Pasta

Spicy chicken pasta made with jalapenos, fresh oregano, and a sprinkling of Cojita cheese to finish it.

  • 1 box Barilla® Spaghetti
  • 4 tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Fresh Oregano leaves only
  • 1 Jalapeno Pepper or to taste
  • 1/2 c White Wine dry
  • 2 lbs Plum Tomatoes crushed
  • Salt to Taste
  • 1/2 c Cojita Cheese


  • Place a pot of water to boil.
  • In a skillet brown the chicken thighs with 1/2 the olive oil and add the jalapenos and oregano.
  • After 1 minute add white wine and reduce by half.
  • Add the crushed tomatoes and one cup of water and season with salt, and bring to a boil.
  • Meanwhile cook the pasta according to directions and toss with sauce.
  • Stir in remaining olive oil and Cojita cheese before serving.
  • Garnish with oregano.
