Slice the pineapple and cut into cubes that are approximately 1 inch.
Slice the pound cake into cubes that are about the same size as the pineapple cubes.
In a bowl combine the powdered sugar and Cream of Coconut. Add the Cream of Coconut 1 tablespoon at a time mixing thoroughly in between each one until you have a thick icing (this may not take all of the Cream of Coconut).
Dip the bottom half of each pound cake cube into the icing and then into the toasted shredded coconut.
Place a pineapple cube on top of each and then a cherry. Push the skewer through all three.
