Ingredients

  • 30 Mini Phyllo Cups

No Bake Cheesecake

  • 8 ounces Cream cheese room temperature
  • 1/2 cup Powdered Sugar
  • 1/4 teaspoon Vanilla

Cranberry Fluff

  • 6 ounces Fresh Cranberries
  • 1/2 cup Sugar
  • 4 ounces Crushed pineapple drained
  • 1/2 cup Red grapes sliced
  • 1/2 cup Pecans chopped
  • 1 cup Mini Marshmallows
  • 4 ounces Cool Whip 1 1/2 cups

Instructions

No-Bake Cheesecake

  • Combine ingredients in a bowl and mix thoroughly.

Cranberry Fluff

  • Chop cranberries in the food processor.
  • Add sugar, cover and place in refrigerator overnight (or at least 2 hours).
  • Once the cranberries have been sweetened add pineapple, grapes, and pecans to cranberries and mix together.
  • Add mini marshmallows and mix.
  • Add Cool Whip and fold mixture together until thoroughly mixed
  • Serve immediately or cover and store in the refrigerator

Assembly

  • Pipe a small amount (about a 2 teaspoons) of no-bake cheesecake in each phyllo shell.
  • Top each one with cranberry fluff (about 1-2 tablespoons).
  • Refrigerate until ready to serve.
  • Enjoy!
