Place your cauliflower rice in a large pot and fill with enough water to cover the cauliflower. Cover with a lid and cook over medium high heat for approximately 10 minutes.
Pour the cauliflower into a fine mesh strainer allowing all of the water to drain out. Press on the cauliflower lightly to remove as much water as possible.
Place the cauliflower back in the pot and use the Braun MultiQuick 5 Vario Hand Blender on medium-high speed to puree the cauliflower into a smooth mash.
Add butter, cream cheese, salt, and pepper and continue to use the hand blender to puree until it is smooth.
