These Spicy Chipotle Black Bean Burgers are a delicious alternative to ground beef. Black beans and corn are blended together with spices to make a meatless burger the whole family will love.

Ingredients

  • 2 14.5 ounce cans Black Beans
  • ½ cup Breadcrumbs
  • 1/4 cup Grated White Onion
  • ½ cup Whole corn kernels
  • 1 large Egg
  • 3 tablespoons Chipotles in Adobo
  • 1 teaspoon Salt
  • 1 teaspoon Chili powder
  • 1/2 teaspoon Ground cumin
  • 1/2 teaspoon Garlic powder
  • ½ teaspoon Pepper
  • 1/4 teaspoon Smoked paprika

Instructions

  • Rinse and drain the black beans.
  • Spread black beans out on a baking sheet and bake at 325 degrees F for 15 minutes to remove some of the moisture from the beans.
  • Measure out ½ cup of beans and set aside. Place the rest of the beans in a large bowl and use a fork to mash them up.
  • Add the breadcrumbs, grated onion, corn, egg, chipotles in adobo, salt, chili powder, ground cumin, garlic powder, pepper, and smoked paprika to the beans and mix the ingredients together thoroughly.
  • Form the bean mixture into 4 equal patties.
  • Skillet Instructions: Heat 1 tablespoon of olive oil in a skillet over medium high heat. Cook patties for 5 minutes on each side.
  • Oven Instructions: Place the patties on a baking sheet and spray with cooking spray or brush with olive oil. Bake at 350 degrees F for 15 minutes.
