Heat a large skillet over medium high heat. Once hot add ground beef and cook for 7-10 minutes until it is browned.
Remove the skillet from the heat and pour the browned ground beef into a strainer to remove the excess grease.
Add the ground beef back to the pan and sprinkle with the taco seasoning. Add 1/2 cup of water and heat over medium high heat, stirring to coat the beef with the seasoning. Cook until the liquid has been absorbed then remove from the heat.
Add the jalapenos, salsa, and 8 ounces of cheese to the ground beef and stir together.
Spoon the mixture into a greased 11x7 inch casserole dish.
In a small bowl whisk together the 6 eggs.
Pour the eggs over the ground beef mixture and use a spoon or fork to gently move the ground beef around making sure that the eggs mixture is evenly dispersed.
Sprinkle the remaining 4 ounces of cheese over the top of the casserole and place it in the oven to bake for 45 minutes.
Remove from the oven and let cool for 10 minutes before serving with your keto toppings of choice.
