Keto Taco Casserole

Ingredients

  • 2 pounds O Organics® Grass Fed Ground beef 85% lean 15% fat
  • 3 tablespoons Taco seasoning
  • ½ cup Water
  • 5 ounces Jalapenos canned
  • ¼ cup Salsa
  • 12 ounces O Organics Mexican style blend shredded cheese divided
  • 6 O Organics Large brown eggs

Instructions

  • Preheat oven to 350 degrees F.
  • Heat a large skillet over medium high heat. Once hot add ground beef and cook for 7-10 minutes until it is browned.
  • Remove the skillet from the heat and pour the browned ground beef into a strainer to remove the excess grease.
  • Add the ground beef back to the pan and sprinkle with the taco seasoning. Add 1/2 cup of water and heat over medium high heat, stirring to coat the beef with the seasoning. Cook until the liquid has been absorbed then remove from the heat.
  • Add the jalapenos, salsa, and 8 ounces of cheese to the ground beef and stir together.
  • Spoon the mixture into a greased 11x7 inch casserole dish.
  • In a small bowl whisk together the 6 eggs.
  • Pour the eggs over the ground beef mixture and use a spoon or fork to gently move the ground beef around making sure that the eggs mixture is evenly dispersed.
  • Sprinkle the remaining 4 ounces of cheese over the top of the casserole and place it in the oven to bake for 45 minutes.
  • Remove from the oven and let cool for 10 minutes before serving with your keto toppings of choice.
