Add the mandarin orange juice, lemon juice, apple cider vinegar, honey, and salt into a bowl. Use an immersion blender or whisk to blend together.
Add the olive oil to the juices and blend on high (or whisk quickly) until the mixture is emulsified (thoroughly blended together so it doesn’t separate).
Add the poppy seeds to the dressing and stir.
Assemble your salad ingredients, salad greens, mandarin oranges, almonds, dried cranberries, apple, and goat cheese, in a large bowl.
Drizzle with half of the dressing and toss until the salad is evenly coated.
Serve salad with remaining dressing on the side.
Notes
The citrus dressing recipe makes approximately 1 3/4 cups. You will only use 1/2 cup for your salad. Store the remaining in a mason jar in your refrigerator until you are ready to use.
