Low Carb Loaded Cauliflower Bake
This Low Carb Loaded Cauliflower Bake is an easy low carb recipe that makes a great low carb side dish for Thanksgiving or Christmas!
One of the things I always find the hardest about sticking to a low carb diet, especially around the holidays, is the lack of awesome side dishes. I mean holiday meals are more about the sides than the main course. Am I right? And every side dish I love is bread, rice, or potatoes :(. After doing this whole low carb thing for a few years I’ve come up with a few low carb side dishes that go with just about any dinner and this Low Carb Loaded Cauliflower Bake is one of my favorites (right along with Broccoli Casserole)!
Now I’m not going to sit here and try to convince you that cauliflower tastes just like potatoes. I will however, tell you that when you take your first bite of this creamy, cheesy, bacon-y low carb loaded cauliflower casserole you’re not going to care. It starts with blanched cauliflower (cauliflower that has been boiled long enough to make it slightly tender) and a creamy sauce made from heavy cream and lots of cheese, cooked until it has thickened. The cauliflower goes into a casserole dish and the sauce it poured over it. Then comes the bacon, because seriously what low carb recipe is complete without a little bacon? And then more cheese. the whole thing goes into the oven and bakes until you have a bubbling, gooey, delicious Low Carb Loaded Cauliflower Casserole just waiting to be enjoyed.
When it comes out of the oven you sprinkle it with some chives and dig in. This easy low carb cauliflower casserole makes an awesome side dish for Thanksgiving, Christmas, or just a regular old Wednesday night. Sometimes I make it and eat it as a meal all on it’s own!
Low Carb Loaded Cauliflower Bake
Ingredients
- 2 small heads Cauliflower, cut into florets
- 2 tbsp. Butter
- 3 cloves Garlic, minced
- 2 c. Heavy Cream
- 4 oz. Cream cheese, softened
- 2 c. Gruyere cheese, shredded
- 1 c. Cheddar cheese, shredded
- 6 slices Bacon, cooked and crumbled
- Salt and pepper to taste
- Freshly ground black pepper
- 3 tbsp. Chives
Instructions
- Preheat oven to 350 degrees F.
- In a large pot bring water to a boil and add cauliflower florets.
- Boil for 5-7 minutes or until cauliflower is slightly softened.
- Drain water and set cauliflower aside.
- In a medium saucepan melt butter and add garlic cooking for about 1 minute.
- Add heavy cream and bring to a boil then lower to a simmer.
- Add cream cheese and Gruyere cheese stirring until it has melted.
- Continue stirring over medium heat until the sauce begins to thicken, about 10 minutes.
- Salt and pepper to taste.
- Add cauliflower to a greased casserole dish.
- Pour cheese mixture over the cauliflower and then top with cooked, diced bacon, and cheddar cheese.
- Cover with foil and bake for 30 minutes or until cauliflower is fork tender and cheese has melted.
- Garnish with chives before serving.
