Roasted Cauliflower Steaks with Brown Butter are an easy, but elegant, side dish for Thanksgiving, or just a simple, delicious, low carb (and keto!) dinner recipe for any night of the week. Roasted cauliflower is simple to make and by cutting it into large, flat cauliflower steaks you make it into a meal. Beautifully caramelized cauliflower pairs perfectly with toasted walnuts, nutty brown butter, and the salty, tangy, flavors of capers and lemon. It’s beautiful, filling, and so easy to make!

How Do You Cut a Cauliflower into Slices?

Get the largest head of cauliflower that you can. Remove any leave from around the cauliflower, then cut the stem off close to the base of the cauliflower. Do not core the cauliflower! You’ll need that center stem to hold everything together. Slice the cauliflower cutting it into 1 inch thick pieces. The end pieces may fall apart a little but don’t let that bother you just place the pieces on the pan to roast along with the cauliflower steaks.

How Long Do You Roast Cauliflower?

Roasted cauliflower takes about 20-25 minutes in a 400 degree F. oven. You will want to flip the cauliflower over halfway through the cooking time so both sides get nicely browned.

Do You Have to Use Cauliflower Steaks?

Not at all. If you want you can just core your cauliflower and cut it up into florets. I suggest cutting each floret in half so you have a flat side to lay on the pan. Toss them in olive oil and then follow the rest of the instructions as written in the recipe.

What is Brown Butter?

Brown butter is simply butter that has been heated until the milk solids separate from the butter and brown on the bottom of the pan while the butter becomes a rich golden brown color. This brown butter has an amazing toasted, nutty, flavor that can be used to enhance any recipe that calls for brown butter.

How to Brown Butter:

In a pan over medium heat melt your butter (use a light pan so you can see the color change as it happens). As it heats the butter will foam up and you will see the milk solids begin to separate from the butter. Continue to cook stirring and watching the color as it begins to change. The milk solids will become brown and the butter will reach a dark golden color. Remove from the heat and strain the butter to remove the burned milk solids. Note: I skip this step because I like the slightly burnt flavor of the milk solids. You can try it yourself and see if you prefer to strain it.

Toasted Walnuts, Capers, and a Squeeze of Fresh Lemon

Right before the roasted cauliflower steaks come out of the oven I add my capers and toasted walnuts to the brown butter and heat them all together. Then once the roasted cauliflower is on a plate I spoon the brown butter, capers, and walnuts over the cauliflower steaks, and squeeze some fresh lemon juice over everything. It is AMAZING!

Ingredients

  • 2 heads Cauliflower
  • ¼ cup Olive Oil
  • ½ teaspoon Salt
  • ½ cup Butter, salted
  • 4 tablespoons Capers
  • ½ cup Walnuts
  • 1 Lemon

Instructions

  • Preheat oven to 425 degrees F.
  • Slice cauliflower into 1 inch thick “steaks”.
  • Brush both sides of cauliflower steaks with olive oil and place them on a baking sheet. Do not use parchment paper or a silicone baking mat or you won’t get the beautiful caramelization.
  • Sprinkle with salt and place in oven to bake for approximately 10 minutes, the cauliflower should have a nice brown color to it before flipping. Then flip and continue to bake for another 10 minutes.
  • While the cauliflower bakes make your browned butter. Add the butter to a hot pan over medium heat.
  • As the butter cooks it will foam and then you will see little brown bits begin to form on the bottom. When the color of the butter reaches a deep golden-brown color it is done. Pour the brown butter into a bowl. You can strain the butter to remove the brown bits on the bottom or not. It’s up to you!
  • Add the capers and walnuts to the skillet over medium heat and lightly toast them for 2-3 minutes. Then add the brown butter back to the pan.
  • When the cauliflower has finished baking remove it from the oven and spoon the brown butter, capers, and walnuts over the cauliflower steaks.
  • Squeeze the lemon over the cauliflower and serve.
