CAN THIS LEMON LOAF CAKE BE MADE INTO CUPCAKES? Yes, you can even make them into miniature bundt cakes too. When baking the pound cake in a loaf pan, it takes somewhere between 40 minutes all the way up to an hour. However, when you are making something smaller like cupcakes or mini bundt cakes, you don’t need to bake them for near as long. I would start checking them at around 15 minutes. They may take as long as 25 minutes, but you want to be sure not to overbake them. If you do bake the cupcakes for too long, they will become dry and lose their appeal.
